Apple Pie Pancake Rolls

Happy Wednesday!! I’m here with a special recipe because, well, Wednesday night is breakfast for dinner night. That means you need Apple Pie Pancake Rolls for dinner TONIGHT!

Apple Pie Pancake Rolls are the perfect easy breakfast! A great fall recipe with apple in every bite!

Honestly, until I made these pancakes for Krusteaz, I had no idea that Wednesday was breakfast for dinner night. But now that I do know? It’s on. Brinner is my favorite meal; it’s like dessert for dinner!!

Jordan always gets so excited when I tell her we are having breakfast for dinner, because she thinks that means pancakes or waffles. Most of the time it means bacon and eggs, but I always make some sort of carb to make her happy. Pancakes, muffins, waffles – she’ll take whatever she can get! But pancakes are her favorite, especially pancake rolls.

Pancake rolls are like crepes, but they’re pancakes. My mom has been making these for me since I was a little girl, and now Jordan always looks forward to them when we visit. To make pancake rolls, you make pancakes like normal but you add extra liquid. The extra liquid makes the pancakes super thin once they’ve cooked so that you can roll them up. My mom always filled them with cinnamon sugar, but I’ve been known to throw some Nutella or peanut butter in there.

Now? NOW you can fill them with apple pie. They’re the perfect indulgent breakfast or dessert after brinner!

The pancakes are easy to make using the Krusteaz Light & Fluffy Buttermilk pancake mix. Normally you make those pancakes with water, but to amp up the apple pie flavor I added apple juice instead. You can also use cider, but I couldn’t find cider when I first made these.

It takes a little time to make and flip these pancakes, because they’re so thin. You can use a griddle but I like using a small 6″ frying pan. I add some thin batter to the pan and swirl it around. Cook it until the bottom is browned and then carefully flip it.  Once you get a stack of the apple flavored pancakes, you can eat them right away or freeze them. (We always have a stack of these in our freezer!)

Simply fill the apple pie pancake rolls with apple pie filling, roll, dust with powdered sugar, and eat! You don’t even need syrup with these but I bet ice cream would be fantastic. :)

Total Time: 30 minutes

These Apple Pie Pancake Rolls are SO easy and fast for breakfast! Make a batch on the weekend and freeze the leftovers for a fast morning breakfast that tastes like apple pie!

Ingredients:

  • 1 cup Krusteaz Buttermilk Pancake Mix
  • 1 cup apple juice or apple cider
  • 1/2 teaspoon cinnamon
  • 1 can (approx. 21 ounces) apple pie filling

    Brinner is definitely the best. We’re doing that tonight, too! But I must be Mean Mommy, because I’m not making the pancakes tonight. You can bet that next week’s brinner will include pancake rolls, though! These look so dang awesome.

    Oooo yummmm! It really is amazing to see how the different traditions from different coutries are shared. Here in South Africa we call crepes pancakes (or “pannekoek” in Afrikaans) and your kind of pancakes we call flap jacks or crumpets. Pancakes here is traditionally served as a desert with cinnamon sugar and a little lemon juice. You should try fresh banana slices and caramel or Nutella! Devine!!! Strawberries and Nutella and a little whipped cream is another favourite of mine. We also do savoury pancakes for dinner. You can fill them with almost anything! A lovely savoury mince filling and then you top is with a little cheese sauce, or any creamy type of filling goes good with pancakes. And if you have left over pancakes, they make good lunch box treats for the kids too! A little ham and grated cheese with a little mayo makes for big smiles on my boy’s faces when they have these! We also have regular “brinner” nights! New word for us, my kids will think it’s very cool!

    I LOVE breakfast for dinner!! probably because breakfast is my favorite meal 😉  We have a box of Krusteaz Buttermilk Pancake Mix and pie filling in the pantry – I think I’ll make these this weekend when Allison is home from school
