No Bake S’mores Bars

You might be thinking: aren’t all s’mores no bake? True…but these s’mores bars are even more no bake, because you don’t need a BBQ, campfire, or any sort of heat source to make them.

These No Bake S’mores Bars have only 4 ingredients, come together in literally minutes, and you can make them indoors.

That’s perfect when it’s over 100° every day. Who wants to go out in that?

Every summer I think it must be the hottest summer on record. And every summer someone reminds me that this 90-110° super hot weather in Sacramento is normal. I know they’re right but jeesh. It feels like the hottest summer ever here.

I’m either getting old and turning into that woman who fans herself constantly (even in the grocery store) or my heart is in San Francisco and I just want it to be foggy darn it!

What’s funny? When I lived in the Bay Area (grew up there; moved away kicking and screaming when I was in my 20s) I complained every summer because it was never hot enough to wear shorts. And if it was a heat stretch that reached the 90s, I complained because there was no A/C.

It sounds to me like I’m kind of a complainer. Huh. Maybe I should just shut up now and talk about no bake s’mores.

There’s no complaining about these, especially because I don’t have to camp to eat them.

I don’t think these s’more bars are a new invention. I’m pretty sure there are about a gazillion recipes for this on Pinterest. I decided not to google and let myself think that I’m so freaking smart.

Plus, it was a way to make s’mores in about 5 minutes without going outside and I got to use one of the best cereals ever: Golden Grahams.

Want to know a really unkept secret? I pink puffy heart kid cereal. If left to my own devices, I’d eat Golden Grahams for breakfast, Fruity Cheerios for lunch, Reese’s Puffs for snack, and I’d top my nightly ice cream with Frosted Flakes.

{Yes, that last one. Try it. It’s grrreeeeaaaat.}

Going grocery shopping in the summer (aka with Jordan) is really hard for me. She always begs for kid cereal and I have a really hard time saying no. She knows how to work the system (it also works with books and shoes). One day we came home with a box of Golden Grahams and I knew I had to make s’mores with it.

So I did.

No Bake S'mores Bars

This recipe has a whopping total of…4 ingredients. Golden Grahams, mini marshmallows, chocolate chips, and shortening or oil to smooth out the chocolate. You can leave out that last part but then it’ll be really hard to cut the bars. So…don’t leave it out. You can use Crisco or vegetable/canola/coconut oil.

{Ooooh, brain flash. PEANUT BUTTER. My minds whirling. Stay tuned.}

Anyway, melt your chocolate, mix in your cereal and marshmallows, press into a pan, chill and boom. No Bake S’mores Bars. So easy kids can make them.

The kids will love to eat them too.

No Bake S’mores Bars

Yield: 25 squares

These No Bake S'mores Bars are super easy to make! Only 4 ingredients give you a rich, chocolatey bar filled with marshmallows and graham flavor!


  • 1 bag (11-12 ounces) chocolate chips, semi-sweet or milk
  • 1 tablespoon Crisco shortening or vegetable oil
  • 2 cups mini marshmallows
  • 2 cups Golden Grahams cereal


  1. Line an 8x8” pan with foil and spray with cooking spray. (This is for easy removal from the pan.)
  2. Place the chocolate chips and shortening or oil in a large microwave safe bowl. Heat in 30 second increments, stirring after each, until the chocolate is melted and smooth. (About 1-2 minutes in an 1100W microwave.)
  3. Stir in the Golden Grahams and marshmallows. Pour into prepared pan. Press to compact (this is a messy step!) Chill until set. Slice into squares.
  4. These melt like candy, so I suggest keeping them in the refrigerator if you’re not eating them right away. They taste best after the sit at room temperature for a few minutes. Store in an airtight container; they’ll last about a week.

    These look like a dessert I wanted to create 3-4 years ago with GG’s! I love that cereal, always have, but my smores were more loose and messy and I love how yours is portable and compact. Not that I’d be porting them around anywhere other than straight into my mouth :) pinned

    Whenever I go to San Fran, I complain nonstop about being freezing! But it’s a great city.
    And Golden Grahams is one of my most fave cereals of all time! Love this! Let me know if PB gets in there!

    Yes, I’ve been wanting to make something like for forever! Your pictures are beautiful! I think golden grahams cereal might be even better than graham crackers. I could totally eat kid cereal all the time. Cinnamon Toast Crunch is my weak spot. Anything coated in cinnamon and sugar. Sigh.

    I try to stay away from the sugary cereals, but I do cave and buy an occasional box of Golden Grahams. They are so good! These no-bake s’mores look amazing! My kids would love to help me make (and eat!) them!

    Ah the struggle – love shorts, hate sweating. Thank goodness for AC … and root beer floats. Summer, you are tricky!
    These are anything but! If there are recipes like this on Pinterest, they don’t compete with your photo. You have amazing lighting in these! And on top of that, you used Golden Grahams, aka one of the most addictive cereals on earth. No bake bars are the death of my self control, but I’ll happily let it die … just so long as my AC doesn’t! Pinned!

    So cute, so portable! I miss the San Francisco fog, too, Dorothy, even though I got tired of it when I lived there. But I just discovered a handy-dandy gizmo (actually stumbled upon an unused birthday gift a friend of my husband gave him) – it’s called “02 Cool”, and it’s a dark blue plastic water bottle attached to a battery-operated fan, and you can even press a button to create your own “cool zone” , like the NFL uses. I love it!

    Yes, stay away from google. It’s a killjoy! My mom actually used to make this when we were growing up. It was delicious, but I used to get so mad, because Golden Grahams are my favorite cereal, and she’d use them in these bars! I’ll just have to buy two boxes, one for these bars, and one to eat plain :)

    My weird wonderful kids really and truly preferred non-sugary cereal for breakfast when they were little; Cheerios, Wheat Chex, Rice Krispies. However, nothing beats sugary cereal for snacking straight up out of the box or for making desert treats! These s’more bars looks so chewy and delicious, Dorothy! No way Jordan could have complained that you used up her Golden Grahams…unless you didn’t leave any s’more bars for her!

    I just made these and they were really good but too much chocolate for me. I would definetly make then again the receipe was go easy I would just use less chocolate chips
