Fudgy Brownies with Coconut Frosting

I love the show Modern Family. It’s one of those shows that I know I can count on for a laugh every single week. Even just now, writing this at 6am, I’m chuckling inside because I’m remembering some of the one-liners. I swear, those writers are geniuses.

It would be hard for me to pick a favorite character, but Phil is one of them. Probably because, and I swear this is true, Phil and my husband are, like, the same person. The only difference between them is that Phil is kind of clueless about how funny he is in a not-funny-kind-of-sill way. My husband knows full well he’s being funny-silly and does it on purpose.

Their humor? Is exactly the same.

I often laugh so hard at that show not because of the show but because I swear I could hear my husband saying the things that comes out of Phil’s mouth. That’s what makes it so funny. Sometimes I wonder if Mel is secretly moonlighting as a TV writer.

Remember that episode where he gave his daughter a book titled Phil’s-osphy? OMG I think I laughed so hard I cried through that episode. Some of my favorite Mel Phil quotes (courtesy of the ABC website):

“Success is 1% inspiration, 98% perspiration, and 2% attention to detail.”

“You can tell a lot about a person from his biography.”  {<–that one? OMG fits of uncontrollable giggles because it is hallmark Mel.}

“Never be afraid to reach for the stars because even if you fall, you’ll always be wearing a Parentchute™.” {<– again, a word Mel would totally make up.}

God, I love that show.

Another thing I’ve always loved? Boxed brownie mix. I’ve always sworn it’s the best. There’s not a from-scratch recipe that can top it!

I was wrong.

So very, very wrong.

Because this? THIS is the brownie I was meant to love. It is similar to the boxed mix, fudgy center, flakey top, just like I love. But it’s so much more fudgy. And so much more chocolatey.

Probably because I put three kinds of chocolate in it: unsweetened chocolate, semi-sweet chocolate, and cocoa powder. It’s like the trifecta of chocolate for brownies. They marry along with the sugar and butter and eggs to create my favorite new brownie.

I couldn’t just post brownies though. I mean, I’m me. One of my favorite things to pair with chocolate is coconut. I love me some coconut! I made a butter based frosting that has the trifecta of coconut: coconut milk, coconut extract, and toasted coconut.

What’s two trifectas put together? A nine-ecta?

I asked Mel and he said a six pack. Or a double triple.

Either way, these brownies are the bomb. Fudgy, rich, chocolatey with a touch of coconut. I ate way too many of them. I know you will too! :)

Fudgy Brownies with Coconut Frosting

Ingredients

    For the Brownies
  • 2 ounces unsweetened baking chocolate, coarsely chopped
  • 2 ounces semi-sweet baking chocolate, coarsely chopped
  • 3/4 cup butter
  • 1 3/4 cups sugar
  • 3 eggs
  • 1 tablespoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup all-purpose flour
  • For the frosting:
  • 1 cup toasted coconut
  • 1/2 cup (1 stick) butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons coconut extract (imitation is fine)
  • 2-3 tablespoons coconut milk

Instructions

  1. Preheat oven to 350 degrees. Line a 9x13” pan with foil and spray with cooking spray.
  2. Place the two baking chocolates and butter in a large, microwave safe bowl. Heat on HIGH power for 2-3 minutes, stirring every 30 seconds, until chocolate is smooth. Stir in sugar. Add eggs, vanilla, and cocoa and stir well. Add flour and stir carefully.
  3. Spread batter in prepared pan. Bake about 25 minutes, until a toothpick 2 inches from the outside of the pan comes out clean. Let cool before cutting.
  4. To make the frosting, beat butter in a large bowl with a hand mixer until smooth. Slowly beat in powdered sugar until crumbly. Beat in extract. Add coconut milk, 1 tablespoon at a time, until you reach your desired consistency. Add about 3/4 of the toasted coconut (reserving the rest to sprinkle on top) and stir.
  5. Spread frosting over the top of the cooled brownies. Sprinkle with remaining coconut and slice into squares.

Notes

To toast coconut, place in a frying pan over low heat. Stir constantly until it just begins to brown. Remove from pan to a bowl immediately.

        How deep should the pan be when baking the brownies? i have a school project where I make a container for a backing good, and I would like to use this recipe.

          I use a traditional 9×13″ pan. It’s got 2″ sides. It’s a Pyrex glass dish, but you can also use a 9×13″ metal cake pan.

    Dorothy…..I totally think you hit the “double triple” here. (I’m smiling as I type this….I love that term!) I agree with you…so many boxed brownies are actually pretty good. But it looks like these are here to stay. I LOVE LOVE LOVE your coconut topping and I cannot wait to try these. Adding them to my Pinterest Brownie board….they look THAT good!       Never! I’ve been thinking V-day since Dec 26. It’s about darn time, lol. ;) And me too, I’ve always resisted making my own brownies because I LOVE brownie mix. But this recipe is SO GOOD.

    I love Modern Family too!! And I realized the other day that I’m raising Manny! Gavin had a playdate the other day and he was so Manny-esk, that I could not stop laughing. “Oh, I’m sorry I forgot to show you where the bathroom was!” “Would you like to see the rest of our house?” “You can pick what we play, you’re the guest.” Kind of awesome.

    Love the brownie recipe. My go-to brownie recipe is very similar. 3 eggs, same amt of butter, slightly more melted choc and no cocoa powder, same amt of flour. I love it. I could DIVE INTO yours. So rich and fudgy!

    These brownies are to die for! I have to admit I never saw an episode of Modern Family but from the previews I see they are always hilarious. I think I need a big plate of these brownies and sit back and watch Modern Family for once after I put the kiddos to bed. I always love a good laugh!

    I felt the same way about boxed brownie mix until I started making my own. In my book, the more chocolate the better and the addition of coconut frosting takes these over the top. Perfect for the Chocolate Party.
