Well, it’s starting. We’re on tap to get our first triple-digit day here in Sacramento this week. I don’t know why I’m surprised – this happens every year. May creeps into June and the temperatures creep upward and then BAM: sweltering heat.

Everyone gets up in arms about how it’s 100 degrees! OMG! It’s so hot! But really, it’s Sacramento in June, what do we expect? (And, BTW, by everyone I mean me.)

Admittedly, Sac is better than Phoenix. I’m sure it hit 100 at our old house in March, so I won’t complain too much…

But I’m still going to complain a little. After all, if I lived in San Francisco this week I’d be putting on jeans and gloves. It’s only going to be 70 there, and foggy. I love the fog. I miss the fog. If I could live in SF again I swear I would never ever complain about the fog again. I’d embrace it like the heaven it is.

I’d also embrace a slice of this cheesecake. It’s pretty heavenly too.

No Bake Oreo Cheesecake Recipe

Once the temps start climbing I do not want to turn on my oven. A running oven means a hotter house which means more A/C which means that my electricity bill makes me have to work harder, which means I have to bake more. It’s a vicious cycle.

That is, until you bring no-bake cheesecake into the equation. I can make no bake recipes all summer long and it doesn’t make me cry when I read my PG&E bill.

Adding Oreos to the no-bake cheesecake is just, let’s say, the icing on the pie.

This recipe can be made in under 20 minutes, I promise. You start with a no-bake Oreo crust. You can make your own there with that little how-to post, or you can buy one from the store. Then comes the fun part: the no bake cheesecake!

No bake cheesecake is one of my favorite pies to make because it’s fast, easy, and it works every time. It’s totally no-fuss! Start with a brick of cream cheese that you’ve let soften on the counter for at least an hour. (Honestly, that’s the hardest part of this recipe – remembering to leave the cream cheese out!)

You sweeten the cream cheese with sugar and vanilla and then you add the fun part: the Oreos! I coarsely chopped some Oreo cookies and then mixed them into the cream cheese with my hand mixer. Doing this breaks up the cookies even more and gives that all-through-the-cheesecake Oreo look.

How to make a No Bake Oreo Cheesecake

Then, to give the cheesecake it’s volume, you fold in a container of Cool Whip.

The hot button question: can you use fresh whipped cream? Yes, but only if you’re serving this pie the same day. Fresh whipped cream doesn’t hold up like whipped topping does and it tends to weep and flatten over time. So if you’re making and serving this pie within a couple hours, it’s probably okay with the fresh.

Fold in your whipped topping, fill your pie, and chill for at least an hour. Before serving, top with some more whipped topping and crumbled cookies. Because, duh, that makes it better.

No bake cheesecake is a winner all year long, but especially in the summer.

No Bake Oreo Cheesecake

This No Bake Oreo Cheesecake is easy, delicious, and the perfect pie! Start with a homemade Oreo crust and fill it with cookie filled cheesecake for the perfect no bake cheesecake!

Ingredients:

  • 1 Oreo Crust (or store bought)
  • 8 ounces Challenge cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 container (8 ounces) Cool Whip, plus more for garnish
  • 10 Oreos, divided

Directions:

  1. Beat cream cheese, sugar, and vanilla with a hand mixer in a large bowl.
  2. Chop 8 of the Oreos into coarse pieces. Add to mixing bowl and mix in with the mixer until combined. This will break up some of the chunks into smaller pieces. Fold in the Cool Whip.
  3. Spread filling into prepared pie crust. Chill at least 2 hours before serving.
  4. Before serving, crush the remaining 2 Oreos. Top with more whipped topping and the crushed Oreos.
  5. Store covered in refrigerator for up to 3 days.

  1. I just made your Oreo crust last night and it was amazing. So now the only thing to do is make this. This recipe looks so easy but yet looks so amazing. It`s making me crave a large slice now and it`s only 6 a.m. I`m going to have to try this one very soon.

  2. Dorothy, the heat is making you delusional. You would never love SF fog because it’s terrible. Cold, damp, awful. I love the restaurants in SF and the great fitness opportunities. The hills and fog? Noooo.
    I wish we could swap climates. But in a way it’s better that you are where you are so you can make amazing no-bake cheesecake. I love this flavor. I mean, it’s Oreo. What could possibly be better?

  3. I can’t believe it’s that hot up there! San Diego is so chilly in May and June that I wear tons of layers on my evening runs. Yeah, for real. Like it’s low 60s and damp and windy and sorry I’m a wimp LOL  I love that this is no-bake. That makes is wayyyy too easy to enjoy 🙂

  10. Enduring sub-zero temps in Minnesota for 15 years has made me so heat tolerant. I almost love it. Almost. I’m a summer gal at heart. BUT that doesn’t mean I can stand the oven on…no-bake treats FTW.

  11. I miss SF, too!  Even the sound of the foghorns at night. Last summer we spent a few days in San Diego, and it was sooooo hot, and a lot of people don’t have air conditioning because they depend on ocean breezes (which were not blowin’ when we were there!).  Glad to have a no-bake dessert!

  17. I have made a version of no bake cheesecake that will last a week in the fridge using heavy cream. The key is to use clear unflavored gelatin mixed into the cream cheese mixture before folding in the whipped cream and refrigerating for at least 4 hours to set. You will bloom the gelatin into about 1/2 cup water while you beat the cream cheese, vanilla and sugar until fluffy. Heat the gelatin over low heat but do not boil. Stream gelatin into the cream cheese mixture as you beat it. Quickly fold in whipped cream, our onto prepared crust and refrigerate. Making it this way makes the cheesecake less sweet.

  32. Why ounces? I find them so confusing as its a weight and a volume. So when I see ounces I’m like am I using a measuring cup or a scale. You should use things like 8 fluid ounces instead of just ounces if it’s volume.

    • I wrote 1 container (8 ounces) Cool Whip because that’s the size of the container I used. Cool Whip containers come in 2 or three sizes so it’s important to say which size container I used. I did not measure it, by scale or cups or otherwise. I just used the 8 ounce package.

  34. Hi, just made the cheese and it was great. One thing that could be good to mention (I’m a novice here) is to remember to thaw the cool whip about 4 hours before beginning.  All the places that carry cool whip or similar are frozen.  Thanks for the great write up. 

    • I wish I had read this before making it 🙁 I bought frozen whipped topping (I’ve never used it in a recipe before) and put it in straight out of the freezer so I had to kind of beat it in and it flattened.

  37. I make a similar no-bake cheesecake, minus the Oreos, and I love it. I can’t wait to try it with Oreos! I’m making it right now.

    One tip that I’d give is to use powdered sugar instead of granulated. It blends into the cream cheese so much easier and smoother. 

    My recipe is way sugary-er – I use one 8 oz package of cream cheese, one of 8 oz cool whip, and 1 cup of sugar. I could definitely see cutting back on some of that sugar though.
