You know what TV show I miss the most? Friends. I know it’s still on TBS or one of those networks, but it’s not the same. You see, back in the 90s when Friends was on, we didn’t have DVR. So we either had to watch it live or tape it on VHS.

{Remember those days? I mean, I know some of you do. You must. Not everyone was born after 1990, right? Because sometimes? That’s how it feels.}

One of the things I loved most about that TV show was how it introduced me to the term Friendsgiving. I remember watching those Thanksgiving episodes and thinking, “Where are the parents? Don’t they have family to spend the holiday with?” Spending Thanksgiving with friends, and not family, was something I’d never thought about before.

Now, Friendsgiving is a total thing. It’s officially defined as “The celebration of Thanksgiving dinner with your friends. This usually occurs on the Wednesday before or the Friday after Thanksgiving Day, since Thanksgiving is usually reserved for family gatherings” by Urban Dictionary.

I kind of really like that idea.

You know another thing I’ve never done? A progressive dinner party. You know, the kind where everyone contributes a different dish; someone brings an appetizer, a main, a dessert, etc.

I mean, I’ve done them here on the blog, but never in real life. Friends and I have discussed it, but it’s just never happened. I think because we all kind of live far away from each other and no one wants to have to drive from house to house.

And, unfortunately, I’ve learned the hard way that neighbors should be kept at arms length, so that’s out.

So, instead of actually attending a progressive dinner or a friendsgiving, I’m going to do them both virtually. After all, I’m a blogger for a reason; virtual is where I excel. Real people? Not so much.

Today I’m part of probably my most favorite progressive dinner of all time: The Frito-Lay Friendsgiving Virtual Progressive Dinner Party. I mean, a party with RUFFLES Original Potato Chips. Now here’s a party that’s my kind of style.

I’m bringing a dessert, obviously. Because potato chips + dessert = best way to eat potato chips with all your peeps. After all, if you’re making a recipe with Frito-Lay snacks, you kind of have to share it with friends. Keeping it a secret would be just…mean.

Plus, if you’ve never combined potato chips and dessert, let me tell you that you’re missing out. Adding potato chips to things like chocolate and caramel gives your dessert that legendary salty and sweet flavor combination that everyone just loves so much.

Potato Chip Caramel Brownie Pie – the epitome of sweet and salty

First, it’s a brownie “pie”…without a crust. Actually, it’s my favorite easy one bowl brownie recipe (or the 2-cup recipe for my homemade brownie mix) that’s baked in a 9″ pie plate. (Note: you could use as small as an 8″ pie plate, but don’t go much bigger than 9″ or it won’t be full enough.)

Once the pie cools, you top it with melted caramels.

Once the caramel sets, you top it with chocolate ganache.

Then you crush up some RUFFLES Original Potato Chips on top and you serve it at your friendsgiving.

Then your friends ooh and ahhhh and gasp over it’s amazingness, and then they attack this Potato Chip Caramel Brownie Pie with forks.

This salty and sweet dessert is like no other! A brownie pie topped with caramel, ganache, and crushed potato chips!
Prep Time 12 minutes
Yield 10 servings
Serving Size 1 /10th pie

Ingredients
 

  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 2/3 cup unsweetened cocoa powder
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 22 caramel squares unwrapped
  • 3 tablespoons + 1/2 cup heavy whipping cream divided
  • 1 cup chocolate chips
  • 1 cup potato chips crumbled

Instructions

  • Preheat oven to 350°F. Spray a 9” pie plate with cooking spray.
  • Stir together melted butter, sugar, and cocoa. Stir in eggs, vanilla extract, water, and salt. Carefully stir in flour. Spread in prepared pan.
  • Bake for about 18-22 minutes, until it looses it's glossy sheen and a toothpick comes out 2” from the side with only crumbs sticking to it. Cool completely before making the caramel.
  • Place caramel squares and 3 tablespoons heavy whipping cream in a medium sized microwave-safe bowl. Heat on HIGH power in 30 second increments, stirring well between each, for about 1 1/2 to 2 minutes, until caramel is melted and smooth. Pour caramel over the top of the cooled brownie pie, leaving a slight border around the edge. Let set for at least 2 hours, or overnight. (If letting sit overnight, store at room temperature loosely covered; the plastic wrap will stick to the caramel so make sure it's not touching it.)
  • Place chocolate chips and remaining 1/2 cup heavy whipping cream in a microwave-safe bowl of measuring cup. Heat on HIGH power for 1 minute, then whisk until smooth. If the chocolate will not all dissolve, you can heat in additional 15 second increments.
  • Pour ganache and spread over caramel layer. Top with crushed potato chips. (It’s best to do the ganache and chips within a few hours of serving.)
  • Store at room temperature and eat within 3 days.

Oh my goodness, does that look incredible and oh so decadent!  Wow!  I’ve never tried potato chips with chocolate, but I can imagine that the sweet/salty combo would be amazing.  And don’t worry, you’re not the only one that remembers watching Friends in real time and recording it on the VCR!  I heard it’s coming onto Netflix actually which could mean having to rewatch them!
