30 Minute One Pot Taco Skillet Recipe

This one pot taco casserole is what to make when 5 o’clock hits and you have no idea what to make. It’s a fast and easy one pot meal with simple ingredients. I keep them on hand for those dinner emergencies when everyone’s hungry, and I need something asap.

  • This casserole is layered in a large skillet and cooked on the stovetop. You don’t even need to turn on your oven!
  • It’s the perfect fast weeknight recipe because it’s a 30 minute meal and hearty enough to serve all on its own. Or you can serve it with rice, tortillas, tortilla chips or try it with pasta.

Ingredients in Cheesy Taco Skillet

Meat: I used lean ground turkey but you can definitely use ground chicken or beef.

Vegetables: Diced onion, red bell pepper, and green bell pepper add extra flavor. Dice them small.

Taco Seasoning: Use your favorite brand or mix.

Beans: You can use any beans but I like using BUSH’S® Beans in Mild Chili Sauce because the sauce adds flavor.

Corn and Olives: For extra flavor and color

Shredded cheese: Obviously!

How to make Taco Skillet with Beans

  1. Cook the turkey, onion, and peppers over medium-high heat in a large pan or cast iron skillet. When the turkey is no longer pink, drain off the fat.
  2. Add the taco seasoning and beans with the liquid from the can. Stir and then simmer them for about five minutes. Mix in the corn and olives and cook them with the other ingredients for about a minute.
  3. Sprinkle the cheese over the top and cover the pan. Once the cheese is melted, it’s ready to serve.

How to Store Leftover Taco Casserole

If you have leftovers, they will keep well in the refrigerator for several days.


  • Meat: Instead of ground turkey, make your taco skillet dinner with ground beef or ground chicken.
  • Beans: Pretty much any kind of beans will work in this dish. My husband loves the spicy beans in this dish! If you use plain canned beans, you might want to add some salsa to the pan to add flavor.
  • Toppings: Feel free to add a few toppings like chopped cilantro, a scoop of sour cream, or some sliced avocado.
  • Side Dish Ideas: Spoon it over white rice, brown rice, or cauliflower rice. Sometimes we stir cooked pasta into the skillet. It’s also great as a dip with tortilla chips.
  • Other Ways to Serve It: Use it as a topping for baked potatoes or as a filling for burritos or tacos. I just love this one pan taco skillet meal – it’s saved me many times during busy weeks! One Pot Taco Casserole

One Pot Taco Casserole is an easy weeknight meal! It’s the perfect amount of spicy with ground turkey, chili beans, taco seasoning, and lots of cheese! The leftovers are perfect as a dip with chips or in tortillas as tacos!

Serving Size 1 serving


  • 1 pound ground turkey
  • 1 medium onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 package taco seasoning
  • 1 can 16 ounces BUSH’S® Beans in Mild Chili Sauce
  • 1 can approximately 15 ounces corn, drained
  • 1 8 ounce can sliced olives, drained (optional)
  • 1-2 cups shredded cheese


  • In a large 12-in skillet, cook ground turkey, onion, and peppers over medium-high heat until turkey is no longer pink. Drain fat.
  • Add taco seasoning, and beans (with their liquid) to the pan. Stir to combine. Simmer, stirring occasionally, for about 5 minutes. Stir in corn and olives, cook another 1 minute.
  • Top with shredded cheese and then cover the pan with a lid to allow the cheese to melt.
  • Serve hot. Store leftovers in an airtight container in the refrigerator for up to 2 days. Leftovers are good in tortillas as tacos or served with chips as a dip.

My Favorite Beans

Of course, when you’re buying beans, you want to buy the ones that are the best.   1. Tried it. Loved it! I had the same issue with water because I didn’t use a package taco seasoning either. I tried adding 1/4 cup of water to the recipe and it seemed to be enough. Only change I would make next time is to try using Trader Joe’s frozen roasted corn for a deeper corn flavor. I thought the canned corn was bland.

  2. The instructions say to add water, but water isn’t on the ingredient list. How much needs to be added? I have a recipe I use to make my own taco seasoning, so don’t have a seasoning packet with instructions for adding water (I assume that’s the water the instructions are referring to).

  4. How many tsp or tbsp or ounces of taco seasoning are in a packet? I use a bulk qty. rather than a pkg as it is way cheaper.
