45 Minute Dinner Rolls

Yeasted rolls in a flash? You bet! These Dinner Rolls will be on your table in under 45 minutes, I promise. Fresh baked bread – the best part of any meal.

Bread and me, we’re BFFs. I can remember back when I was a kid, my favorite snack was a slice of Home Pride white bread. I’d eat the crust, then mash the center up into a little ball and savor it slowly.

As a teen and then, later, a college student, I discovered the wonder of sourdough bread. I loved it so much I wanted to marry it. And how, despite how hard they try, grocery stores outside of San Francisco just don’t do sourdough properly. (It was a loooong 5 years in Arizona without my Boudin, believe me.)

I used to be afraid of cooking with yeast. Terrified. It’s alive. What if I killed it? Then one day I made pizza dough from scratch and was hooked. Unless I’m back home eating Village Host, I want my own, homemade pizza crust. After pizza I moved onto cinnamon rolls. And well, we all know how good those are!

It was only the next natural progression to venture into dinner rolls. I love having bread with dinner. Or lunch. Or breakfast. Or dessert. Or anytime of the day. I love bread, remember?

About a year ago, I came across this recipe for 30 minute dinner rolls by Your Homebased Mom. I was incredulous. 30 minutes? REALLY? Because that would be life changing.

And it was!

These rolls are a little crusty on the outside and super fluffy on the inside. Honestly, they’re the perfect dinner roll for me. I love a super doughy roll (remember, I lived on the center of Home Pride when I was a kid!) and that’s exactly what these are. Dense, chewy, yeasty, and perfect.

Now…30 minutes seemed like a stretch but I went for it anyway. But I’m no Rachael Ray – the time to cook and rise is 25 minutes, leaving 5 minutes in between for everything else. Needless to say, it was longer than 30 minutes start to finish. Which is why I’m calling my version of these rolls 45 Minute Dinner Rolls. Or, maybe Less than 45 Minute Dinner Rolls.

Since making things with yeast was scary to me for a long time and probably still is for some of you, I thought I’d do some process photos, so you can see what the dough looks like at each step in the (less than) 45 minute process.

Now, in order to have yeasted rolls in less than 45 minutes, you need to start with a lot of yeast. This recipe has a whopping 2 tablespoons of yeast. You need to get the yeast to wake up and rise quickly – so you need warm water and sugar. I heat my 1 cup of water in the microwave for about 30 seconds before adding it to the yeast, sugar, and olive oil. Place it all in the bowl of a stand mixer and let it sit for 15 minutes. Set a timer, walk away, start the rest of your dinner.

When you come back after the 15 minutes, it will look like that photo up there. Nice and foamy and very fragrant. Then you have to add your flour and salt. (The original recipe calls for an egg, but I’ve found leaving it out doesn’t change the flavor, so I don’t use it anymore.)

Start your mixer on “Stir” until the flour mixes in enough that you won’t be wearing it when you speed it up. Turn it to “2” for about 30 seconds, then kick it up to “3”. At that point, the dough should be coming together nicely. Don’t worry if it’s stuck to the sides of the bowl – the mixing should clean it off just fine. After a few minutes of mixing this is what you’ll have:

A pliable and not-too-sticky dough and an almost clean bowl.

If you’re having trouble getting to this point, add a few more tablespoons of flour. I don’t have to do that very often, but occasionally I do. I think it has something to do with the weather. Or maybe I just made that up.

Divide your dough into 12 rolls. I have a Pampered Chef dough cutter thing I love to use, but you can use a knife. Roll them into little balls and place in your pan (that has been sprayed with cooking spray). Let them rest for 10 more minutes. Then bake for 10 minutes at 400 degrees. They’ll puff and brown and be fabulous.

Dinner rolls are practically a requirement at my house. The best part is that this recipe makes 12. There are only 3 of us, which means we get leftovers. Or, rather. I get leftovers. Breakfast, lunch, dinner, and snacks!

45 Minute Dinner Rolls

Yield: 12 rolls

Total Time: 45 minutes

Dinner rolls on the table in under 45 minutes - it can be done!

Ingredients:

  • 1 cup warm water (30 seconds in the microwave)
  • 1/3 cup olive oil
  • 2 tablespoons sugar
  • 2 tablespoons active dry yeast
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour

Directions:

  1. Preheat oven to 400 degrees.
  2. Place the water, olive oil, sugar, and yeast in the bowl of a stand mixer fitted with the dough hook. Let the mixture rest for 15 minutes. It will be very frothy when your timer rings! Mix in the salt and flour using the dough hook. Start on “Stir” for a few seconds, until the flour starts to incorporate. Switch to “2” for about 30 seconds and then kick it up to “3” until the dough completely comes together. You know it’s done when all of the dough will join to form a ball and the sides of the bowl are almost clean (no dough left). If your dough is too wet, add an additional tablespoon or two of flour.
  3. Place dough on a cutting board and section into 12 balls. Place the rolls in a 9x13” baking dish sprayed with cooking spray. Let rest for 10 more minutes.
  4. Bake for about 10 minutes, until the tops start to get golden. Enjoy!

Have you ever seen the big bread crocodile Boudin has in their window? I wanna be able to make that kind of sourdough :) How awesome would that be for an Indiana Jones party?

      My wife has MS and I have learned to cook instead of having a mid-life crisis. Thank goodness for the computer and my apple IPad which substitutes for an old fashioned cookbook. I have tried several yeast roll recipes in the past and was never satisfied with any of them. The ones I did in the past were either a little tough or the crust was purely hard. Now with this recipe, my wife was happy and when the children visit they say they are the best rolls ever.

      BTW, I started using yeast making pizza dough also. We prefer my home-made pizza to any delivery and so does a neighbor that works in a different town and gets home late. Every week or so when I make pizza for us, it is easier to make two pizzas at once so I usually deliver a pizza and salad across the street. They are great neighbors, they are just for the wrong football team. Roll Tide, Roll

    Your life changes when you learn to bake with yeast! A whole new world (disney song) is opened!! I always told my married daughters that if they wanted to be the hit of the show learn to make good rolls. Take a pan of hot rolls to the inlaws for dinner and you are the favorite! Rolls are also so inexpensive to make–rolls are pennies, where a fruit plate is $10-$20. When you are on a tight budget (most of us are) rolls are the way to go!
    This looks like a great recipe–next time the kids visit I will try it.

    These rolls look awesome! And I’ve been scared of yeast too. I inherited (aka stole) a thermometer from my childhood home that has a little range marked on it where the temperature is perfect for yeast. Hot enough to wake it up, but not too hot that it kills it. I think that I would be lost without it. Trying these soon!

    Oh, yum! These look so fluffy, crusty, chewy good. The 45 minute plan is perfect for last minute me! Yeast does scare me. We definitely have a love/hate relationship going. I have killed more than my fair share of little yeasties. I am getting better at bread baking but my hips aren’t sure that is a good thing! Can’t wait to try this. Thanks for the process photos.     This is brilliant. I’d love to have fresh bread with dinner on any given night. What difference does the egg make? Does it change the structure? Just curious. I usually have a lot of eggs that need eating, so I just wondered what would happen if I threw it in.

      You can add the egg, you’ll just need more flour. The original recipe was 1 egg and I think 3 1/2 cups flour, but I usually needed to add a little more than that. I didn’t notice a taste difference between the two!

    did you notcie that you left the sugar out of the recipe on the bottom? did I make a mistake by adding it? Or did you forget to put it into the directions? I added it in with the yeast. I can’t wait to see if mine come out as good as yours look!

    wow The pictures have me! I have been making bread for the past month and loving it but these rolls are so much easier and look sooo good I am going make them for sure. Started making my own bread so i knew what I was eating and use only ingredients i can pronounce lol

    what would you recommend if you dont have a dough mixer? I just have a little beater type mixer, with the two beaters that pop out lol. no dough hook or kitchenaid mixer here :( are these as easy to mix by hand? or can I use my beater with just one beater in it maybe? feel free to email me recommendations at careenprokop85@gmail.com

      I’ve never done yeasted dough by hand – but I know it can be done. Stir it until the dough gets stuck to the spoon, and then knead it with your hands until it comes together and isn’t very sticky anymore. Then you’re ready to go to the next step! Let me know how it works out!

    Have you ever tried to freeze this recipe? I love homemade rolls but love the convenience of freezer rolls. On top of that, I don’t need a dozen rolls staring me in the face. :)

    I made this for dinner tonight. I don’t have a mixer, so I just used my hands and they came together very easily and cooked up perfectly. However, the olive oil gave them a taste that my children didn’t care for. So I think the next time I make them, I will use vegetable oil instead.

    Has anyone given any thought as too just splitting it 6 times instead of 12 and trying to make your own Sandwich Buns? I wonder if that would work…

      You could totally make it into 6 instead of 4. I think they’d be perfect as buns – I’ve used them on turkey sandwiches. Hamburgers would be good too – but they’re a little more dense than traditional hamburger buns. :)

      Yes! You can stir until you can’t anymore, then turn it out onto a floured surface and knead it until the dough comes together. I haven’t done that, but it’ll work! Enjoy!
