I love banana bread – I have so many recipes for different versions: from the classic banana bread recipe to chocolate chip banana bread, zucchini banana bread, even banana bread made with pancake mix. But this one? THIS is the best hack ever: Cake Mix Banana Bread.

It’s soft, moist, flavorful and tastes like banana cake in loaf form…but it’s quick bread. This recipe makes two loaves so you have enough to eat one and freeze one for later!

Ingredient Notes

  • Cake Mix: You can use yellow cake mix but really any flavor would work (spice cake mix or white cake mix would be delicious). I used Betty Crocker brand.
  • Bananas: You want to use overripe bananas (lots of brown spots). I often freeze my overripe bananas if I don’t feel like baking them (pop them in the freezer right in their peels) and then thaw them before baking the batter.

Add-Ins

The bread is delicious plain but you can also doctor it up by adding chocolate chips, white chocolate chips, nuts (chopped pecans, almonds or walnuts), sprinkles, or anything you like. You can even add a swirl of peanut butter or Nutella on top.

How to make Cake Mix Banana Bread Tips

  1. It’s easiest if you mash the banana before adding it to the other ingredients.
  2. I just mix this by hand but you can also use an electric mixer in a large mixing bowl.
  3. Be sure to use nonstick cooking spray so the bread doesn’t stick.
  4. This recipe will also make 24 banana muffins (bake in a muffin tin).

Storing Banana Bread

  • You don’t need to store this in the fridge, but place it in an airtight container or wrap well with plastic wrap.
  • You can freeze the bread as a whole loaf or slice and freeze in sandwich bags.

Ingredients
 

  • 1 (approx 15 ounce) box yellow cake mix (any flavor)
  • cup vegetable oil
  • 3 large eggs
  • 3-4 medium very ripe bananas , mashed (1 ½ cups (350g) when mashed)
  • 1 cup mix-ins optional (see note)

Instructions

  • Heat oven to 350°F. Spray two 8×4-inch loaf pans with nonstick baking spray.
  • In a large bowl, stir together cake mix, oil, eggs, and bananas until well blended. Stir in mix ins, if using. Divide batter evenly between pans.
  • Bake 43-48 minutes or until a toothpick inserted in the center of the loaves comes out clean. Remove once cool.
  • Store in an airtight container or well wrapped in plastic wrap at room temperature for a few days or freeze for up to a few months.
