Cake Mix Banana Bread Recipe

Make banana bread from a cake mix! This cake mix banana bread is so moist and soft and full of flavor - like banana cake!

Ingredients

  • 1 (approx 15 ounce) box yellow cake mix (any flavor)
  • cup vegetable oil
  • 3 large eggs
  • 3-4 medium very ripe bananas , mashed (1 ½ cups (350g) when mashed)
  • 1 cup mix-ins optional (see note)

Instructions

  • Heat oven to 350°F. Spray two 8x4-inch loaf pans with nonstick baking spray.
  • In a large bowl, stir together cake mix, oil, eggs, and bananas until well blended. Stir in mix ins, if using. Divide batter evenly between pans.
  • Bake 43-48 minutes or until a toothpick inserted in the center of the loaves comes out clean. Remove once cool.
  • Store in an airtight container or well wrapped in plastic wrap at room temperature for a few days or freeze for up to a few months.

For mix-ins, use up to 1 cup of the following:
•Chocolate Chips
•Chopped pecans or walnuts
•Blueberries or other fruit (fresh or frozen)
