I’ve been making this pineapple punch for years and it’s my favorite way to get a taste of a tropical vacation without leaving the house! The party punch reminds me of our trip to Hawaii and all the fun we had. It just transports me right to those memories and it’s the perfect adult drink for brunch or any gathering.

I love cheap alcoholic punch recipes especially when they’re easy to make! What I love best about this cocktail recipe is that you can make most of it ahead of time and then finish it just before you serve it. I hate worrying about mixing individual drinks for a party, so this is the perfect solution – just mix it up in a pitcher and you’re good to go. You can also make this non-alcoholic – a fruity mocktail for anyone not drinking alcohol.

Ingredients Needed

  • Pineapple juice: Buy a large can
  • Rum: You can use white rum or coconut rum
  • Chilled Prosecco: Or you can use any sparkling wine
  • Frozen pineapple chunks to keep it cold – they take the place of ice cubes without watering it down.

How to make Pineapple Punch

To make the drink just combine the juice, rum and prosecco in a pitcher. Stir to combine and then add the pineapple chunks. So easy! Just the way a summer cocktail should be, right? Serve it in a large pitcher or large punch bowl. Garnish with fresh pineapple wedges.

  • In addition to frozen pineapple, add frozen blueberries or strawberries for color
  • You can also garnish with orange slices or maraschino cherries

The mocktail version of this drink tastes like a pineapple soda. It’s so refreshing.

Just omit the rum and prosecco and use regular or diet sprite (or other lemon-lime soda), ginger ale, or plain club soda instead. 

Storage & How to Make it Ahead

You can mix the pineapple juice with the rum ahead of time and keep it in the refrigerator. I wouldn’t do this more than a few hours in advance.

Just before you’re ready to serve it add the prosecco. You want all the bubbles from the sparkling wine, so don’t do this part ahead.

If you’re making it non-alcoholic, combine ginger ale or Sprite with the juice right before serving since there’s only the two ingredients. You will want it to be nice and fizzy.
