Slam Dunk Peanut Butter Cookie Reese’s S’mores

So, I’ve kind of been addicted to s’mores lately…and not the traditional kind. First, I made s’mores with Girl Scout Cookies. Now?

Now I’m making s’mores with Reese’s Peanut Butter Cups. You’re welcome.

As you probably already guessed from, oh, the 5,000,000 posts on this blog with peanut butter in them, I’m totally addicted to the stuff. Cookies, brownies, pie, breakfast. I can’t. Get. Enough.

One of my favorite candies are REESE’S® Peanut Butter Cups, which I’m sure you probably guessed by now. If a bag of them is in my house, I will eat all of them, no joke.

I *think* somewhere there is a proven scientific fact that one bag of Reese’s Peanut Butter Cups (no matter the size) is only one serving. Come on, back me up on this…right?

Anyway, what’s better than a peanut butter cookie and a peanut butter cup? A s’more made with both.

These? Are totally drool worthy.

I know, right?

They’re super easy to make too: take two rich peanut butter cookies (from my favorite recipe) and then make a s’more. I used the broiler to make my s’mores by placing a mini peanut butter cup on one cookie and a marshmallow half on the other. You heat them under the broiler for just a few seconds (really, don’t walk away from the stove!) and then sandwich them together.

The peanut butter cup gets gooey and oozey. The marshmallow gets melty and sticky. These are the best s’mores ever!

You could totally do this over an open flame in the traditional method. But then I’d have to be, you know, camping. #idontdothat

You can make these any way you want, for any event you’d like. They’d be perfect treat to feed all your friends that come over and watch the big basketball games this month. You could even do what I did and make the cookies look like basketballs before baking.

Slam Dunk Peanut Butter Reese’s S’mores

Yield: 2 dozen cookies

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1teaspoon vanilla
  • 1 tablespoon milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 3/4 cups flour
  • About 12 large marshmallows, cut in half
  • About 24 Reese’s Peanut Butter Cup Miniatures, unwrapped

Instructions

  1. Preheat oven to 350°F. Line 2 cookie sheets with parchment or silpat baking mats.
  2. Cream butter, peanut butter, and both sugars in the bowl of an electric mixer fitted with the paddle attachment. Add egg, vanilla, milk, and salt and baking soda. Mix until combined. Slowly add flour and mix until dough comes together.
  3. Scoop 1 tablespoon sized balls of dough and place them on prepared cookie sheets, 2 inches apart. Gently press each ball with the palm of your hand to flatten. Using a spoon, make marks to resemble a basketball, if desired. (You can also make the criss cross marks with a fork instead.)
  4. Bake for 8-10 minutes, until the bottoms begin to look brown. Cool at least 5 minutes on cookie sheets before removing to a rack to cool completely.
  5. Assemble the s’mores: turn cookies upside down on a cookie sheet. Place large marshmallow halves on half the cookies and a peanut butter cup on the other half. Broil until the marshmallow is toasty and peanut butter cup is melty, under a minute. Make sandwiches and serve warm.
  6. Note: You can also toast the marshmallows the old fashioned way: over an open fire!

  6. My favorite thing about going to the family cabin is s’mores night…seriously. And I don’t use boring old chocolate bars in my s’mores, I use full size pb cups. Melty choc and pb mixed with marchmallow and graham cracker goodness – yum! These cookies are the perfect fix for the other 49 weeks of the year I’m not able to make s’mores.

  9. I had strawberry s’mores for the first time the other night at a bonefire. Used puffy sugar cookies, chocolate toasted marshmallow and even roasted strawberries over the fire to add to them. Next time I am going to suggest we make these!

  20. Just finished voting! Yours was in bracket 10 out of 16… For the first 2 minutes, I was really scared I missed it! How often can we vote?? I really want you to win! :)

    I’ve basically stopped buying Reese’s because I can’t. stop. eating. them. EVER. And my guy hates PB, so when all of the wrappers end up in the trash can, you can guarantee who did it. And it’s not our chihuahua. (Thank goodness). Your s’mores look absolutely amazing! I love those gorgeous drips of melted chocolate and strings of marshmallow. I bet even Mel wanted a taste after seeing them on the counter!

  30. It’s been raining for hrs and I was looking for something to bake for my husband to have after his hockey game tonight. No need to look any further!
    Also-for the past year, I’ve been trying different combinations for s’mores. Using my homemade cookies as well as any store bought. Biscoffs, and those windmill spice cookies are good, as well as Milanos (double chocolate of course!) and all sorts of chocolate. Snickers, Crunch Bars, Milky Ways…well…I HAD to use up the leftover Halloween candy, right?!
