Healthy Banana Nut Chip Ice Cream & Giveaway

Thanks to the sponsorship of Albion Fit, I was inspired to make a healthy treat for you! This Banana Nut Chip Ice Cream is Healthy! Only a few ingredients, and it comes together without an ice cream machine.

I only have one session left with my trainer. As much as I have loved the great workouts, I’m kind of glad. I’m tired of being asked “how’s your eating?”

Well, let’s see. I’m a dessert blogger, who bakes constantly and has no willpower. How do you THINK my eating is going?

I’m writing down all the workouts he’s created for me and I plan to keep on doing them. Plus, it’s almost summer so…

(1) I can do classes at the gym because Jordan will be with me and I’ll want to be alone a lot every day so I’ll workout double so I can use the child care.

(2) I won’t be able to scarf 26 cookies at noon because she’ll be right there staring at me and then want some of my stash and I’m not sharing.

After a particularly brutal session last week when he asked about my eating and I told him I was headed home to make walnut butter and ice cream, I decided that maybe I should make something healthy. You know…try and be good, for a day at least.

Then I remembered that banana “ice cream” I read about last summer, over at Alli-n-Son. An ice cream made with only bananas and add-ins. No cream or milk or anything else. Sally made a milkshake using this method last week, which reminded me I wanted to try it.

Surely, that would be okay with my trainer, right?

While we’re on the subject of the gym, let’s talk workout clothing for a minute, mmkay? Recently I was contacted by Albion Fit to review some of their women’s fitness and swimwear. When I checked out their site to see what sorts of clothing they have, I was instantly drawn to their Go Long Crews. They came with thumb holes!

Can we talk about thumb holes for a second? There are two very different camps of people: pro thumb holes and anti thumb holes. I fit firmly in the pro category. My previous workout layering shirts are actually sleep tops I got years ago. They didn’t come with thumb holes, but by pressing so much on the inner wrist area, they now have them.

The material on this top is thin and perfect for workout layering. I always wear a light long-sleeved shirt when I run, even if it’s warm. Unless it’s super hot out, my hands and feet don’t regulate temperature right, and they turn purple, go numb, and hurt, which makes being outdoors not pleasant. (Really, it’s a thing. It’s called Raynaud’s.) Having thumb holes keeps my hands just a little warm (when it’s not cold enough for gloves) and I can run with full feeling in my hands.

With summer coming up, I needed a new bathing suit and some of the ones at Albion are super pretty. I was crushing on the Blousy Suit and the Criss Cross Suit, but I finally decided on the Gown Suit. It’s gorgeous!

The material is a good bathing suit thick, and the ruching in the waist totally slims my food baby. Mel told me it looks really good on me, and honestly, I kind of liked myself in it (so NOT normal when I wear a bathing suit).

{We all know I’m not posting a picture of myself in a bathing suit online. It’s not happening, so don’t hold your breath. The model is much prettier.}

This ice cream comes together in a flash. Seriously, all you do is freeze some banana slices, then pulse them in a food processor until they’re smooth. It looks like and has the consistency of soft serve ice cream once it’s done. You can totally eat it just like that – pure frozen bananas.

But I’m me. I need to add mix-ins!

I love banana and walnuts together. I also love banana and chocolate. So I added both: some chopped walnuts and some mini chocolate chips. Feel free to substitute a vegan variety if you wish!

I also added a tablespoon of maple syrup to sweeten it. You can substitute honey or agave, or leave it out completely!

This ice cream is going into my go-to rotation. Depending on your add-ins it’s dairy-free, gluten-free, and vegan. And healthy!

Unless you eat the entire bowl…which is something I would totally do.

Healthy Banana Nut Chip Ice Cream

  • 3 bananas, sliced and frozen
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped toasted walnuts
  • 1/2 cup mini chocolate chips

  1. If you haven’t already, slice your banana into chunks and freeze in a sandwich bag. Once the bananas are frozen, you’re ready to make your ice cream.
  2. Add frozen bananas to a food processor. Process for a few minutes. I had to stop occasionally and smoosh up some large frozen chunks that didn’t want to break up right away. Keep processing and you will eventually get what looks like soft serve ice cream. Add maple syrup and cinnamon and pulse until combined.
  3. Transfer mixture to a tupperware bowl and stir in nuts and chocolate chips. Freeze until firm, at least 2-3 hours.
  4. Enjoy guilt-free!

I tried making banana ice cream last summer, but I didn’t realize you actually had to take the peel off the banana before freezing it, so it didn’t really turn out. But I definitely need to try it this summer!

    • Dorothy Kern replied on May 26th, 2013 at 8:26 am

Definitely try it again! It’s good!

This is genius, genius, genius! I almost want a trainer to push me through all that–but you’re totally right, the oven at home keeps me cringing at their nosy questions (although I suppose that’s their job! …right?). I will only eat my bananas frozen-ish, so this sounds delicious!

Being the ice cream addict that I am, I don’t know why I haven’t tried the frozen banana trick yet. Probably because I can’t keep a banana in the house for the life of me…

Thanks for the awesome giveaway! I’m crossing my fingers for a new suit!
