
These were too fun for me not to share with you. I posted them originally over at Design Dazzle, for their 100 Ideas of Christmas Wonderful series. But these are super simple, and, it being almost Christmas Eve and all, I figured you might need a last-minute treat for your cookie platters.
Are you all ready? I mean…Christmas Eve is tomorrow. TOMORROW, can you believe it? Today I’m in a whirlwind of baking, cleaning, and trying to figure out a way to de-hair my dog so that there is a point to vacuuming before my parents get here.
Isn’t this, like, the prettiest bowl of sprinkles ever?
Sprinkles and me, we’re BFFs. Especially Christmas sprinkles. I loooooove seeing the red, green, and white mix. In fact, I spent $7 on a pack of 4 bottles of sprinkles so I could have the bottle of jimmies for these cookies. Totally worth it. Jimmies are my absolute fav.
These cookies are easy-peasy. They start with cake mix. Anything is better with cake mix!
I added some butter emulsion (like a thick extract) to the batter, to pump up the Funfetti-ness of these cookies. If you don’t have butter extract, don’t worry. They are cake batter enough with just the cake mix.
Then I made marshmallow cream frosting for the filling. Can you say sugar overload?

Your family and the kids stuck at the kid table are going to love them tomorrow!
So, um, if you need a super easy and sparkly dessert, make these. I promise you won’t be sorry!
And Happy Christmas Eve-Eve. Unless you’re reading this tomorrow…then, well. Christmas is tomorrow!

Ingredients
- 1 yellow cake mix
- 1/2 cup butter, softened
- 2 tablespoons oil
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon butter extract or butter emulsion (optional)
- 1/4 cup Christmas (or rainbow) jimmies
- 5 tablespoons butter, softened
- Heaping 1/2 cup marshmallow fluff
- 2 cups powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon heavy whipping cream
- 1 tablespoon jimmies
Instructions
- Preheat oven to 350 degrees. Place all cookie ingredients except sprinkles in a mixer bowl and mix on medium speed until combined. Stir in sprinkles.
- Drop tablespoon sized drops of cookie dough onto cookie sheets lined with parchment paper. Bake for 6-8 minutes, until cookies have browned ever so slightly on the bottoms. Cool completely before filling.
- To make filling: cream butter in a large bowl with an electric mixer. Beat in fluff until combined with the butter. Slowly mix in the powdered sugar until it has a crumbly, pea-sized texture. Add vanilla and heavy whipping cream and beat until frosting forms. Stir in sprinkles.
- Frost the bottom of half of the cookies, and top with a second cookie. Best served room temperature.

I adore jimmies too. This month I bought a huge $7 bottle of red, green, and white ones…sprinkles have been going on everything here:-) Love cake mix cookies…and with marshmallow filling, even better!!!
