These Turtle Brownie Pies are the perfect bite for any party!

Well, hello. Something seems strange. Is the air different? Or…maybe you have a new haircut?

Oh wait, I know what it is.

I’m posting a new recipe on a Thursday night!

I’ve decided I want to post more recipes. Because I’m not fat enough making you sugar, I want to make you more.

And that means I get to talk to you more too!

Anyway, I’m here for an extra day. I’m thinking mostly it’ll be recipes…but sometimes I’ll do round-ups too. Like, next week for the end of the #2weeksofpie I’m planning a massive pie round-up. It’s gonna be epic.

Don’t worry, it’s not going anywhere. I’m just going to post it on Friday nights instead. It might be my least viewed post of the week…but it’s my favorite one to write!

I actually made these awhile ago, when I catered for my sister-in-law. I followed the recipe to a T. (I know, I couldn’t believe it either.) They were so good, I knew that even they weren’t tweaked by me, I had to share them.

Large pies are the most popular dessert for Thanksgiving, I know. Your mother-in-law would probably cringe if you showed up with cookie sized pies.

BUT.

I love making a lot of dessert for Thanksgiving. Several different flavors of pie get served. If you’re like me, you want to eat every single pie. But, if you’re like me, it gets embarrasing having four slices of pie on your plate.

It, however, is totally acceptable to have two slices of pie and two cookies or mini pies. Totally.

So if your MIL flips out because you brought little food, just explain to her that it’s better because that way people can trick themselves into thinking they can eat more dessert. And they won’t miss a bite of her awesome mincemeat pie she serves every year.

These mini pies have a pie crust, are baked with pecans and carmel under the brownie, and then topped with ganache and more caramel. They were a finalist in the Pillsbury Bake-Off for a reason, yo!

Make them. You must. They are beyond deliciously amazing. They will win you favors with your in-laws. I promise.

Turtle Brownie Pies

Ingredients
 

  • 1 bag (14 ounces) caramels, unwrapped
  • 1/2 cup whipping cream
  • 2 refrigerated pie crusts (from one box)
  • 1/2 cup pecans , finely chopped
  • 1 box (15.9 ounces) brownie mix
  • 1/3 cup vegetable oil
  • 3 tablespoons water
  • 1 egg
  • 2/3 cup semi-sweet chocolate chips
  • 1 tablespoon light corn syrup

Instructions

  • Preheat oven to 350 degrees. Spray 36 mini muffin cups with cooking spray.
  • In a medium bowl, microwave the caramels and 1/4 cup of cream on HIGH for 2-3 minutes, stirring every 30 seconds, until melted and smooth. Cool 30 minutes.
  • Unroll the pie crusts and, using a 2 1/2 inch round cookie cutter, cut 18 rounds from each crust, rerolling the dough as necessary. Gently press each round into the bottom and up the sides of the muffin pan. Place about 1/2 teaspoon of pecans in the bottom of each cup, on top of the prepared crust. Spoon 1/2-1 teaspoon of caramel over the pecans. (The crusts will be about 1/2 full.) Reserve the remaining caramel.
  • Stir brownie mix, oil, water, and egg in a medium bowl until smooth. Spoon 1 level tablespoon of brownie batter into each crust cup. Bake 18-24 minutes until a toothpick inserted into the edge of the brownie comes out clean. Cool 10 minutes in pan, then run a knife around the edges to loosen and carefully remove from cups. Cool completely.
  • Make ganache by melting chocolate chips and remaining 1/4 cup cream in a microwave safe bowl on HIGH for 1-2 minutes, stirring every 30 seconds, until melted and smooth. Stir in corn syrup and spoon ganache over tops of cooled brownie pies. Refrigerate for 30 minutes, or until the ganache has set.
  • Microwave the remaining caramel mixture until smooth and pourable. Spoon over the top of each pie. Or, place in a ziploc bag with the tip cut off and pipe in a criss-cross decorative pattern. Let set. Store loosely covered in refrigerator.
