Cinnamon Roll Coffee Cake Pie

This Cinnamon Roll Coffee Cake Pie recipe is a traditional coffee cake in a cinnamon roll crust!

So, it’s conference week at Jordan’s school. They have half days all week. Actually, they had a half day a week ago Monday (for report card preparation) then another half day last Friday for the start of conference week, then this Monday just past was a holiday (Veteran’s Day) and now they have half days all week. Oh, and next week they have off, the whole week, for Thanksgiving.

I’d like to know the point of even going to school on a half day.

{And, before I get hate mail – I’m not saying this against the teachers. They have no control over it. I felt this exact same way when I was a teacher.}

I mean, really. School starts at 7:50. Lunch is at 11 and I pick her up at 12:20. They also have approximately 5 recesses and 4 bathroom breaks in there as well. {Yes, I’m exaggerating. But you get the idea.}

Really, all a half day does is put me a half day behind.

I’d almost rather have her at home where she can watch 5 hours of Hannah Montana read books and study Latin by herself while I work, so that I don’t have to lose the perfect 12:00 light in my kitchen waiting in the ohmigod why do people get here a half hour early parking lot.

I know she’d rather stay home with me. Because I make stuff like this while she’s at school. And by the time she gets home, it’s frozen, eaten, or given away.

Who wants to plant their face in that topping? Anyone?

This pie starts with cinnamon rolls. You flatten them with your hands and press them into a pie plate.

Then you mix up a simple coffeecake recipe and fill the crust with it. I used my mom’s coffee cake recipe. It’s the one I’ve used to make my pumpkin coffee cake and my carrot cake coffee cake. It’s my favorite recipe, and this is the basic, simple version (except I subbed oil for butter – you can use either).

And, well, icing. I used the packet that came with the cinnamon rolls. Is anyone else addicted to that packet of icing? I could eat it, straight from the plastic, with a spoon.

Pie shouldn’t be left for just dessert. I mean, you gotta eat breakfast on Thanksgiving, right?

I’m just looking forward to when Jordan goes back to regular, full days. Then I can eat my breakfast without setting my timer so I won’t forget to pick her up.

Cinnamon Roll Coffee Cake Pie

Make a traditional coffee cake inside a cinnamon roll pie crust!

Ingredients

  • 3/4 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups flour + 2 tablespoons — divided
  • 1 can — 8 count cinnamon rolls with icing
  • 1/2 cup brown sugar
  • 2 teaspoons cinnamon
  • 2 tablespoons butter — melted
  •  

Instructions

  1. Preheat oven to 350 degrees. Spray a pie plate with cooking spray. (I used a 10” pie plate.)
  2. Stir together sugar, oil, egg and milk in a large bowl. Add baking powder, salt, and 1 1/2 cups flour, and stir until no lumps remain. Set aside.
  3. Open can of cinnamon rolls and separate. One at a time, press the cinnamon roll between the palms of your hands to flatten. Press each into the bottom and up the sides of the pie plate to form the crust, pinching to seal any gaps between the rolls.
  4. Pour the coffee cake mixture over the cinnamon roll crust.
  5. In a small bowl, add the brown sugar, cinnamon, and 2 tablspoons of flour to the melted butter. Stir and sprinkle over the top of the coffee cake.
  6. Bake for about 30 minutes, until a toothpick comes out just shy of clean. While warm, top with icing that came with the cinnamon rolls.
