Butterscotch Reese’s Pudding Cookies

I’ve never been one for fad diets. I’ve never been good at them either.

Atkins? NO WAY. Carbs are my life.

Paleo? Ha. No refined sugar? I might die.

Weight Watchers…tried it. Some success. But, calculating and counting is so boring. And way overrated. And it’s not fair my husband got extra points just for being a man. I mean, what the heck? They get paid more AND they get more WW points? So. Not. Fair.

But, it has recently come to my attention that my weight is getting out of control.

First, the weather cooled off. And I tried to wear pants.

Second, I weighed myself. Big mistake. Big. HUGE.

{And, if you just read that last sentence and wanted to follow it with “I have to go shopping now” I love you a little bit more.}

Since regular “dieting” is out (I’ll never stick to anything), I decided on a 48-hour cleanse to kick start me and get me…well…cleansed. (The Dr. Oz one, to be specific.)

I can do anything for 48-hours. I think.

Today is day 1.

I’ll keep you posted.

I’ve already had to pee waaaaay too many times. But that’s probably TMI.

Let’s talk cookies instead. Since I can’t eat them, I’ll share them with you.

Now, I’m calling these Skinn{ier} Butterscotch Reese’s Cookies. Not skinny. Skinnier.

I took out some of the butter, and replaced it with applesauce. (Never fear, the butterscotch takes over and you can’t taste the apple!)

But then I filled the cookies with two cups of chopped mini Reese’s Peanut Butter Cups.


Oh, and insanely good. Did I mention that?

Because these have less fat you can eat lots of them.

That’s proooobabbbly what got me into trouble in the first place, methinks.

Excuse me. I have a Pineapple/Pom/lemon drink that is just calling my name. I’d rather have that than cookies any day!

Butterscotch Reese’s Pudding Cookies

Butterscotch Reese’s Pudding Cookies are FULL of butterscotch flavor without a ton of guilt – they’re made with a combination of butter and applesauce to cut down on the fat. That way you can add more Reese’s peanut butter cups!



  1. Preheat oven to 350°. Line cookie sheets with parchment paper and set aside.
  2. Whisk together baking soda and flour and set aside.
  3. Cream together butter, applesauce and sugars. Add the pudding package and beat until well blended. Add eggs and vanilla extract. Slowly add the flour mixture and mix until just combined. Stir in chopped Reese’s.
  4. Scoop into 2 tablespoon size balls and place on your cookie sheets. Bake for 10-12 minutes.


These cookies are a little softer in texture than your usual all-butter cookies. You don’t taste the applesauce, but if you’d prefer to use all butter, just substitute 1 stick for the applesauce

  1. hahahahaha 🙂 Let me know how it goes! I looked it up to make a grocery list for today’s shopping trip– I didn’t make it past reading the first meal before I shut the lap top. Sorry… I guess I’m a poor excuse for a cleanse-buddy. :/ I DID eat spaghetti squash for dinner though… that kind of counts, right??

    These cookies look amazing! I LOVE butterscotch in the fall. And Peanut Butter Cups… well, YES PLEASE all year round 🙂

  2. I love that these are skinnier–yes, that’s a thing. And yes, that makes them healthy. As for fad diets, I am awful at them. Could never do Atkins or juice cleanses, but when I try to eat healthy or diet, I inevitably fail miserably. Sigh. I was meant to eat cookies forever.

Because anyone that can justify suggesting that a recipe containing 2 cups of peanut butter cups is skinny-ish is most definitely welcome in my home. {And while you’re here, can we pretend that Nutella should be listed among nutritionally approved “nut butters”?   4. I am a diet fad junkie…but I never seem to finish them. I am interested in the cleanse…I can do anything for 48 hours too:-) But then I would probably fill up on cookies as soon as the cleanse was over, so big fail for me!!! Let me know how it goes!!! I’ll be eating cookies while I wait for you:-)

  6. Ugh. I tried Atkins YEARS ago and it was pretty much the worst thing ever–no fad diets for me, thankyouverymuch. But I am kindof interested in this cleanse (I totally trust Dr. Oz), so you’ll have to let me know how it works out for you.

    In the meantime, I’ll just eat some skinnier cookies and mark that down as dieting. These look great!

  7. seriously interested in your cleanse – I did a 28 day cleanse last January – was GREAT – BUT…the blogging and eating took over. NEED to cleanse again – or I will NEED bigger jeans

  9. Reading food blogs is bad for anyone’s weight. Just like looking at fashion blogs is bad for one’s self-esteem. In fact, I don’t remember being nearly as neurotic before blogging and deployment took over my life.
    I lost weight via WW in high school (my mom is a success story) and once you ingrain some of those habits they really do stick with you.
    However, cookies are cookies. And I’m not gonna eat one. I’m gonna skip lunch and dinner and eat 12 instead. It’s all about choices 🙂

  16. Not only did I hear the line, I saw the scene in my head. LOVE that movie and can recite it.

    True Story. My sister called me one day all kinds of excited. She just had to tell me about the traffic stop she made. (She’s a State Trooper) She got out of her car, walked forward and literally heard in her head, “Hey! That’s a Lotus Esprit!”

    She wanted to ask if “this baby corners like it’s on rails” but unfortunately that would not have been professional AND would not have been appreciated since she had to tow the car and ARREST the driver.

  18. I feel your pain. I just posted and referred to my 7 annoyance pounds that I would like to think is muscle weight, but is, in fact, buttercream and cookie dough weight. I would probably still go with the muscle thing if it wasn’t for the fact that my jeans aren’t fitting in places that I’ve never had issue with before!

    It’s kind of like that silly e-card that says “That moment when you realize your muffin top has become a pound cake ” – so true and so very, very, sad:(

  22. You crack me up! You sound like me lately. I lost a ton of weight last year after having my twins. Well needless to say some of the weight just magically came back on. So back to dieting I go so I’m right there with ya! Loving this recipe!

    But good for you for taking action and doing a cleanse. I did a 3-day cleanse where I could eat raw fruits and vegetables and drink the smoothies they provided. It actually wasn’t as hard as I was expecting, but I imagine being able to eat fruits helped!

  24. I know right… the secret to Atkins seems to be that you can’t eat anything good so you lose tons of weight because you just. don’t. eat.

    That’s how it would be for me anyways. 😉

  29. Ugh… just thinking about going on a cleanse makes me want to eat (all) of these cookies. Now what I do HIGHLY recommend is getting a body wrap (…not the “water” loss kind, but one from a reputable spa that does it with the vitamins/minerals). I always get one before I’m about to “kick start” working out or eating better. Which starts tomorrow actually- blah!
