How to Make Chicken Avocado Salad

  1. You can use leftover or rotisserie chicken breasts – just shred them for the salad.
  2. I love mashing avocado with a potato masher in a large bowl and then adding the other ingredients.
  3. I add salsa, salt, and pepper so I don’t need many other spices. You could even add cilantro!
  4. You can enjoy this on a bed of lettuce or make it into a sandwich with tomato. I also sometimes add bacon! And we love a soft bun (gluten-free if needed).

Variations

Part of the beauty of chicken salad is that you can pretty much add anything to it and end up with something yummy. A few popular variations include:

  • Using sour cream instead of greek yogurt
  • Adding hard-boiled egg
  • Using extra veggies like shredded carrot, diced red onion, or chopped celery for some crunch
  • Adding a bit of sweetness with dried fruit, like raisins

Storing Leftovers

Store chicken salad in an airtight container in the refrigerator. I don’t recommend freezing it; it’s best eaten within a few days.

Recipe Notes

The easiest chicken to use is a rotisseire one from the grocery store. Simply shred and use in the recipe. You can also cook chicken breasts (grill/roast/boil) and then dice or shred them. Or use leftover chicken from a previous dinner.
