These Brownie Cookie S’mores are a fabulous twist on an old favorite. Brownie cookies are mixed with marshmallows and graham crackers for a decadent and easy s’more summertime treat!

I do not like camping. Not one little bit.

I have not, in fact, been camping since I was 14. And that was in an RV. The last time I camped, like with a tent, was probably when I was under 8. It was cold, the ground was hard, and I had to pee in a porta potty in my mom and dad’s tent.

That is NOT a memory I enjoy or particularly want to recreate.

A few months ago Jordan had a creative writing assignment that was to write about a camping trip. I think she was the only one in the class that had to ask if it was okay if she wrote about a trip to San Diego to visit her family. I know, I’m stunting her growth by not subjecting her to dirt, bugs, scary midnight noises, and sleeping outdoors.

I’ve told my husband he is welcome to take her camping. I’ll just go to the spa instead. The poor guy. Do you know that he actually river rafted down the Colorado River before we met? Yeah, there for sure aren’t any plumbed bathrooms on that trail.

I’m a princess and I know it.

So, needless to say, we don’t do campfire s’mores. Once in awhile we’ll hoover over the BBQ or the gas stove.

Or, in the case of these brownie cookie s’mores, we huddled around the broiler.

I love, love, LOVE roasted marshmallows. I can eat 20 in a sitting, no joke. I also love graham crackers and brownies, so this recipe is kind of magical for me.

And it’s way, way too easy.

1. Make some brownie cookies. I used a brownie mix.

2. Broil/roast some marshmallows on top of graham crackers.

3. Smoosh the brownie cooking on top.

4. Eat 6 while no one is watching.

Seriously, these cookies almost make me want to camp. Almost.

But not quite. I’d rather just eat these and pretend I’m camping. You know, with four walls, indoor plumbing, and a pillow-top mattress.

Brownie Cookie S’mores

Brownie Cookie S’mores - make s'mores out of a graham cracker, a brownie cookie, and a toasted marshmallow!

  • 1 box dark chocolate fudge brownie mix (9x13 pan size)

  • 1/3 cup vegetable oil

  • 1 egg

  • 1 tablespoon water

  • 18 graham cracker halves (9 sheets)

  • 18 large marshmallows

  1. Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.

  2. Mix brownie mix, oil, egg, and water in a large bowl with an electric or hand mixer. Beat until it comes together in a thick dough.

  3. Scoop 2 tablespoon scoops of cookie dough onto the cookie sheet. Bake for 8-9 minutes, or until they lose the glossy sheen around the edges but are still a little shiny in the middle. Cool completely before assembling s’mores.

  4. Turn oven to broil. Place graham cracker halves on cookie sheet and top with a large marshmallow. Broil for just a few minutes, until the marshmallow is browned to your liking. Remove from oven and immediately press a brownie cookie on top of each s’more. Cool slightly before eating.

  1. Yuuuum! This is pretty genius! My husband says we’re going camping soon but I’m trying to talk my way out of it. Yuck.

  2. OMG! Get in my belly!! YUM!! This looks amazing!

  3. My whole family are HUGE campers and this sounds perfect, that way you don’t have to deal with the chocolate candy bars melting in the hot trailer.

  4. I always have a good giggle when reading your stuff! Sounds and looks YUMMY!

  5. Sounds and looks delicious! I totally agree with you about camping. I’ll take air conditioning and carpeting over tents and bug spray any day!

  6. I would rather punch myself in the face than go camping, but I do love smores. This looks like a great way around the whole campfire/dirty thing! Thanks!

  8. Didn’t you know that parents were here to torture their children…?? lol At least you got to see a lot of our beautiful country when you were growing up instead of staying home all summer long. And we did stop at EVERY Dairy Queen along the way!
    Love you,
    Mom :}

  9. These s’mores look delicious! My kids would love them! I hate camping too. I will not go, although, I’m sure my husband would love to!

  10. They look like the perfect cookie for a nice, warm, holiday long weekend 🙂

  11. Haha – my family always went comfort camping when I was young, a couple times a year. We had a small/medium RV and I mostly remember binging on trail mix while watching Creepshow…oh yeah, we had a TV too 🙂 I’ve only gone tent camping a couple of times and I’m not too anxious to do it again 😉

  12. What a perfect Memorial Day cookie! Who could not LOVE this combo!?!

  13. I hate camping because of bugs but I love cottaging. 🙂

    These are perfect for summer.

  14. The last time Nathan and I went camping, there was a wind storm that picked up our tent and snapped one of the poles in half. Even more upsetting? It spilled my drink. I have not been camping since and I don’t intend to ever go again. #thisiswhywerefriends These look AMAZING. I love roasted marshmallows too! In the winter we roast them in our fireplace. Talk about being a princess.

  15. Thanks for this amazing recipe!

  16. ugh, I’ve never been camping and I never want to. But I do want to eat about a dozen of these.

  17. Haha – that’s funny. I actually love camping and can’t wait to go this year. Maybe you should give it another try! 🙂 But camping or not, these look fab!

  18. My family’s version of camping is a Motel 6! Fortunately I also grew up in a town where all the big parties were campfires so I got my fill of s’mores! I love that these are made with brownie cookies instead of chocolate bars- that’s genius!

  19. My hubby will throw the Tent in the backyard once a year for him and the boys. Needless to say I stay inside nice and cozy in the bed by myself! This summer when that time comes around again I will treat them with these fantastic cookies! That brownie cookie looks yummmmm!

  20. I would much rather stay home and make more brownie cookies that can be made into s’mores than go camping. I am right there with you on not really ever wanting to go. Although we did go last summer, and it wasn’t as horrible as I remembered…probably because we were in a camper and not a tent. I have some shudder moments from previous tent camping trips. I think cookies are in order to help me forget!!!

  21. I am definitely a fan of the idea to eat these and “pretend” to be camping!

  22. These look so incredibly yummy Dorothy! And you are too funny about camping 🙂 We went last summer and it wasn’t too awful but I remember people looking at me strangely as I tried washing the boys hands about every 10 minutes…apparently it’s all good to be dirty when camping 😉 Thanks for the shout out girl!

  23. An inside out s’mores with brownie? You are so speaking my language! Brownies are always always always an amazing choice. This gets five stars for creativity and addictiveness through computer screens. How do you do that?!

  24. I’ve only gone camping three times and all three of those times were at a weekend long outdoors concert. It was fun at the time but I really am not a fan of sleeping in a tent or having to use porta-potties or having to shower in a community facility. I love the outdoors but give me a cabin or a cottage and I’ll be fine!

These little treats look wonderful. I’ve pinned them. Have a wonderful day, Dorothy!

  25. I’m with ya on the camping. Blech.

But s’mores….oh s’mores I love. These cookies make me ever so happy 😀

  26. Eating stuff like this outside is messy and sticky. I like to eat s’mores on the couch while watching t.v. and surfing the internet. I think you should top these with some frosting 🙂

  27. These look…. amazing! I want to race home and make these ASAP! So delicious!

  28. The idea of using brownie cookies is genius … love it! I guess that I’m in the minority … I enjoy camping! I’m past the tent camping thing, but enjoy our tiny retro trailer. It’s a requirement that restrooms and showers are available. Most of our camping revolves around food, shopping in town and golf 😉

  30. Oh man I’m not a big camper either! S’mores isn’t enough of an incentive. THESE are however! Love this idea Dorothy!

  31. Gosh this looks so yum!!! Beyond yum! And s’mores with brownie cookies are insane in the best way possible!

  32. we love camping…but ONLY in the RV {I need a proper potty}, but these look SO much better than camp smores

  33. Seriously. Just when I thought s’mores couldn’t get any better you add a brownie to them. These look absolutely amazing!

  34. Wow. This does looks like I could easily eat a good 6 or 7 in one sitting. I don’t think they could get me to go camping though.

I’m in the same boat.. I remember going camping in a cabin when I was in my early teens and I had to be taken back home (3 hours away) so I could use the bathroom. I’m a man, but I cannot hang outside if I don’t have to. I’ll go hiking or whatever, but I’m not sleeping out there.

  35. What a fabulous idea! S’mores are my favorite and I love this twist on them!

  36. The only camping I have ever done is in a RV trailer. Sleeping on the hard ground doesn’t appeal to me but s’mores do. These brownie cookie ones look amazing!

    Thanks for the link love!

  37. YUMMY! S’mores are my absolute weakness…I hope the weather shapes up so we can enjoy some. In the meantime I’ll just makes these babies!

  38. DOH!! What a smart idea!!!

  39. Everything you make is amazing!! Seriously. I want one of these right now! 🙂

  40. Oh boy, these look amazing. I see these quickly becoming an addiction.

  41. We went camping to at least 2 different National Parks every summer while I was growing up! All I knew was that I LOVED that I got to eat s’mores every night and I didn’t have to shower every day. Seriously, it’s a little kid’s dream! (And now I’d rather spend every night in my own bed with my thick mattress without putting any smelly bug spray all over my clothes and PJs. Oh well…)

We actually JUST starting making s’mores indoors right before my vacation! We used a crème brûlée torch for roasting the marshmallows, and it was so fun. I ate at least 2 or 3 for multiple nights in a row… I used dark chocolate, but a brownie sounds just as good!

    • I want one of those torches, badly!! Mmmm..dark chocolate s’mores. Yes please!

      • The torch is actually my mom’s! My dad bought it for her for Christmas about 5-7 years ago, and when she STILL hadn’t used it a few weeks ago, I stole it (with her permission though!). I’ve heard you can get similar torches at Home Depot and Ace for much cheaper; might be worth checking out!

  42. My idea of camping is glamping & a recipe like this! I can’t wait to try this!

  43. Yum! These look DELICIOUS! Doesn’t seem like they take too much effort either (which is always nice!) I think they might have to be my next project 🙂

  44. These are so awesome Dorothy! Featuring tomorrow 🙂
