Like a Krispy Treat, only Popcorn! Mint Chocolate Chip Popcorn Treats are filled with marshmallows, mini chocolate chips, and a packet of Duncan Hines Frosting Creations in Mint Chocolate Chip to give them their minty flavor and green color!
Last week, on Instagram, I posted a picture of a recipe fail. The picture was of a bunch of green popcorn in the trashcan. That was a sad, sad moment. I really, really hate recipe fails. It kind of feels like when you were a kid and dropped your ice cream cone three licks in. Except now, as an adult, my mommy isn’t here to buy me more ice cream.
Luckily for you, that recipe fail turned into these bars of wonderful.
I had originally been trying to make a popcorn concoction with white chocolate, marshmallows, and Duncan Hines Mint Chocolate Frosting Creations. White chocolate and me, we are not BFFs. Let me put it this way: when I buy white chocolate melts I buy extra. Because I know, without fail, I will ruin the first batch. I’m also very, very happy I had bought two of those Mint Chocolate Frosting Creations, just in case.
Because I had two in my cabinet, I was still able to bring you these Mint Chocolate Popcorn Treats. They’re like krispie treats…except with popcorn.
And they’re gooooood.
I made something similar to these way back when I started blogging. I’m not even going to link to it, but if you go on a hunt please don’t judge the pics I thought were amazing, mmkay?
These are made just like a krispie treat – melted marshmallows and butter. I use lots of marshmallows because I like my treats goooooey. Like, Marshmallow Treats with Popcorn gooey. So…be forewarned. If you like your treats less sticky, you can feel free to add less marshmallows, or add more popcorn.
The Frosting Creations packet is added after all the melting happens. I used the Mint Chocolate because, well, St. Patrick’s Day is next week. And somehow March 17 is the green mint holiday. Plus, I love me some mint chocolate anything. And the flavor is perfect – it tastes just mint chocolate ice cream!
These are the kind of recipe fails I’m happy with. Ones that end up in treats like these!

Mint Chocolate Chip Popcorn Treats
Ingredients:
- 6-7 cups popcorn, popped with kernels removed (from a 3 ounce microwave popcorn bag)
- 10 ounces marshmallows
- 1/4 cup butter
- 1 packet Chocolate Mint Frosting Creations
- 1/2 cup mini chocolate chips
Directions:
- Spray a 9x9” pan with cooking spray. Set aside.
- Pop your popcorn. I used a 3 ounce microwave popcorn packet, but you can use an air popper too, whatever you have. Pick over the popped corn and remove all unpopped kernels. Place about 6-7 cups of popped popcorn in a large bowl.
- Place marshmallows and butter in another larger, microwave safe, bowl. Heat for 60 seconds; stir. Heat for an additional 30-60 seconds, stirring after 30, until marshmallows are fully melted. Stir in frosting creations packet.
- Pour popcorn into melted marshmallows and stir carefully. Pour into prepared pan. Working quickly, spray your hands with cooking spray and press evenly in to the pan. Immediately sprinkle the mini chocolate chips over the top of the popcorn and press lightly to make it stick. Cool completely before cutting into bars.
- Best eaten within 2 days. Store in a tightly covered container.

And I had a mint + choc fail last week too. Omg was I ticked. And then, I thought I’d try again. Another freaking fail. $20 worth of ingredients that I coudlnt even blog about. lol And like 6+ hrs time, or more!
I love that you recovered your fail. And used popcorn. And white choc and mint. I have a marshmallow bar that I made with choc + biscoff spread in Dec. It sort of reminds me of the dark version of these. I am all about popcorn in desserts – rather than…3 cups of white flour 🙂

Yum, this looks delicious! As for white chocolate…unless I’m using candiquik I only use Green and Blacks white chocolate bars. They are the only two that melt NICELY. I got sick of wasting 🙂

Oh man. You make the best popcorn concoctions! My son has an expander (braces type thing) and can’t have popcorn. He informed me I wasn’t allowed to make these because I would be teasing him and that’s not a nice thing for a mom to do. Crud. I’m pinning this for post-braces =o) Thanks

I hate using white chocolate just out of fear of ruining it before I can use it! So temperamental! Lately marshmallow based bars have been everywhere I need to join in on this marshmallow party! I haven’t used any of the frosting creation packets. Do you think they are easy to us?
I’ve only used them twice – and the flavor was spot on. These really tasted just like the Mint Chocolate Ice Cream and I’ve used the bubblegum one that I swear, made me want to blow bubbles!

Recipe fails are the worst. I had one last week…not so bad that I had to throw it away, but not good enough to blog. It needs a few tweaks. I have found that adding just a teaspoon of shortening or butter helps keep white chocolate from seizing. I also never melt it in the microwave because it heats too unevenly there and can scorch before you know it. Slow and steady on the stove has worked so far. I love those Duncan Hines packets…I have been all over them since last summer! What a fun and yummy mint treat for St. Patty’s Day!!!

I had three last week. ON THE SAME RECIPE. But I kept trying and trying. The key is to just not let it get you down and to keep working at it! Or drop it completely, which I usually do too. =)
