Hey! I made you peanut butter cookies! Again!!! Surprised? No? Good.

These are actually not just another peanut butter cookie recipe. The addition of toffee, pretzels, and Reese’s Pieces make sure of that! We love peanut butter cookies at our house. Heck, we love peanut butter anything! But you know who loves peanut butter the mostest most of anyone? My husband, Mel. Peanut butter is his kryptonite. He is allowed 1 tablespoon a day on his diet plan, and boy, he makes sure he doesn’t miss it!

If he allowed himself a cheat day (how he doesn’t is beyond me…) I bet he’d eat a good portion of these cookies. Instead, I got to eat them.

Lucky me!

Why am I going on and on about my husband? Because today is Blogger Husband Appreciation Day!

{That’s a totally made up day. But a necessary one.}

The fabulous Amanda from i am baker decided to do a post appreciating her husband, and invited a bunch of bloggers to join her. Because really, they deserve it. They put up with a lot from us bloggers. It’s hard to explain if you’re not married to one or living with one…but we certainly put them through a lot of torture.

Sugary treats on a daily basis.

Lots of dishes. Lots and lots and lots of them.

Huge grocery bills.

Whining when our stats go down. Cheering when the go up, and crying again when they go down.

Spending couch time on the internet instead of paying attention to them. Because you blog readers, you never seem to sleep!

And there’s so much more. So today is a day all about them – Blogger Significant Other Appreciation Day!

mel and me

As part of our appreciation, we were supposed to interview our significant other. I kind of knew what Mel’s answers were going to be…especially the “favorite recipe” one!

What is your favorite blog called?
Crazy for Crust and Let’s do this kid’s. (Isn’t he sweet? And that second one is Jordan’s blog, FYI.)

(I think that was was supposed to be what is MY favorite bog…lol. I have too many to choose, so I’ll say Jordan’s. I’m a good mom that way. 😉 )

What is your favorite prop?
Cool looking backgrounds

What is the weirdest thing you have seen me do for a blog post?
Camera in one hand, getting light right with the other, one foot on a stool, knee on the counter trying to get just the right shot. (We bloggers need to be flexible!)

If you could have your own blog what would you call it?
Fantasy Football Fanatics (I keep telling him to start it. He’d be so successful because he really does know what he’s doing.)

What do you do for a living and what are your hobbies?
Hobbies – Golf and Fantasy football. I work from home and manage IT outsourced contracts.

What is your favorite recipe from Crazy for Crust?
The peanut butter with chocolate football dip in the shape of a football. Tremendous!

Who does the dishes?
Dorothy does dishes many times a day. I just do them after dinner. (But sometimes the dish fairy does show up during the day. Just sayin’!)

And, I bet, these Toffee Pretzel Peanut Butter Cookies would go on the short-list of Mel approved Crazy for Crust recipes. He’s a total sucker for peanut butter cookies!

Have you ever added pretzels to a cookie? So amazing! I’ve wanted to for a very long time, and never did. The toffee is an added bonus. I think I’m going to start adding toffee to everything. Is there anything better?

The toffee, pretzels, and peanut butter go so well together. And well, as I’ve said before, everything is better with Reese’s!

These cookies will be a huge hit with your family, I promise. And they freeze well, so you can make them ahead of time. Perfect for those Christmas cookie baskets!

{OMG, did I just reference Christmas??? It’ll be here before we know it…}

Make these cookies. Your spouse will thank you. And so will everyone else!

And go give your spouse a hug. Make sure they know you appreciate them!

And to Mel, I love you sweetie, thanks for putting up with my messes and my addiction to social media, my computer, and my phone. I really couldn’t do this job without your amazing support. You rock! xoxo

Did you make this recipe?

Toffee Pretzel Peanut Butter Cookies

1/2 cup butter, softened

3/4 cup peanut butter

3/4 cup packed brown sugar

1/4 cup granulated sugar

1 egg

1teaspoon vanilla

1 tablespoon milk

1/4 teaspoon salt

1/2 teaspoon baking soda

1 1/2 cups flour

1 cup toffee chips (Bits ‘o Brickle)

1 cup pretzel twists, slightly crushed

1 cup Reese’s Pieces

  1. Cream butter, peanut butter, and both sugars in the bowl of an electric mixer fitted with the paddle attachment, about 2-3 minutes. Add egg, vanilla, milk, and salt and mix until combined. Slowly add flour, salt, and baking soda and mix until dough just comes together. Stir in toffee chips, pretzels, and Reese’s Pieces.

  2. Chill your dough for at least 30 minutes. Preheat oven to 350 degrees. Line a cookie sheet with parchment or a silpat baking mat.

  3. Scoop chilled dough and place on the prepared cookies sheets. (I used a 2 tablespoon scoop.) Bake for 8-10 minutes, until they just begin to brown. Cool completely and remove from cookie sheets.
