Waffle Sandwich with Peanut Butter

I absolutely love waffles. I think I love them more than pancakes. I definitely like them more than French toast. For me? Waffles are what I crave when I want syrup. I think it’s something about the crunchy outside and the soft inside.

With my waffle obsession, I thought, why not turn them into sandwiches? Peanut butter waffle sandwiches, to be precise, because I’ve loved PB sandwiches my whole life. So why not combine them?

Well, combine them but make it easy with Pillsbury biscuit dough because if there’s anything I love better than a waffle, it’s an EASY waffle. So, we’re looking at an incredibly easy recipe here, friends, and you’re going to love it.

You use biscuit dough, spread it with peanut butter, sandwich it, and cook it in a waffle iron. You can trim them to make dunkable waffle sticks or serve them as little waffle sandwiches.

They are the perfect breakfast, lunch, or snack for anyone who loves waffles or peanut butter sandwiches. Love a PB&J sandwich? You can make these a waffle PB&J and add your favorite jelly.

Ingredients in Copycat Uncrustables

  • Pillsbury Grand Biscuits – NOT the flakey kind!
  • Peanut butter – use your favorite kind!
  • Jelly or honey – totally optional!
  • Syrup for dunking – or you can skip it and serve these as lunch!

How to make Peanut Butter Waffle Sandwiches

  • Cut the biscuits in half like you’re making a sandwich. Spread some peanut butter on one half of the raw biscuit. Add some honey or jelly if you’re using it. 
  • Sandwich the two raw biscuit halves and crimp the edges, so the filling is sealed inside. This is an important step, so your peanut butter doesn’t leak all over the waffle maker.
  • All waffle makers cook differently, but I heat mine to medium-high, and they cook in about 1-2 minutes. Once the biscuits are golden brown, they’re done. Let them cool a little, then slice them up and dip them in syrup or enjoy them plain.

Variations

  • I love a peanut butter waffle sandwich, but there are other ways to make them. Try using another nut butter like almond butter or cashew butter.
  • Cookie spreads like Biscoff spread, or Oreo Peanut Butter would be so good, too! Not to mention Nutella – it would be the perfect filling if you love chocolate.
  • Use your favorite jelly flavor if you’re sticking with the peanut butter version. Grape jelly is old-school perfection, but I also like some strawberry or raspberry jelly.

Expert Tips

Don’t use the flakey biscuits for this recipe. Double-check the label when you buy them!

Remember your waffle iron may cook differently, so follow your manufacturer’s instructions.

I’ve already mentioned these Pillsbury waffle sticks are perfect for breakfast with some maple syrup for dunking, but they’re also great for snacks and lunches!

Storing & Freezing

Store in an airtight container for up to 3 days, although these are best the day they’re made.

You can also freeze them to have on hand for easy snacks or sneak them into the lunchboxes. If you place them in the lunch box the night before, they’ll be thawed by lunchtime the next day.

Peanut Butter Waffle Sandwich Sticks

This easy breakfast ready is done in minutes and can be frozen for fast morning meals! Make peanut butter sandwiches with refrigerated biscuits and cook them in a waffle maker. Dip in syrup for a fun breakfast!

Ingredients
 

  • 1 can Pillsbury Grands Biscuits 8 biscuits, NOT the “flakey” kind
  • 8 tablespoons Peanut Butter
  • Jelly or honey optional
  • Syrup for serving, optional

Instructions

  • Preheat your waffle maker to medium-high.
  • Open the can of biscuits and cut each biscuit in half like you’re making a sandwich. Place about 2 teaspoons of peanut butter on one side of the raw biscuit dough. If desired, top with some jam or honey. Place the top raw half of the biscuit on top and pinch the edges to seal. (The sealing is important or peanut butter will leak all over your waffle maker!)
  • Depending on the size of your waffle maker, cook one sandwich at a time. (My waffle maker is a standard round size and I make one in the center.) Cook about 1-2 minutes until golden. Time will vary depending on your waffle maker, so just watch the first few and see how long they take.
  • Cool slightly (or completely) before serving. These can be cut into strips and dipped in syrup or you can even just serve them as a sandwich for lunch.
  • Store in an airtight container for up to 3 days or freeze for up to one month. To reheat, simply microwave until warm. You can also toast them to make them crunchy. Or just place a frozen sandwich in a lunch box the night before and it’ll be defrosted by lunch the next day!

Go team lazy!!!  I find it so hilarious that after working out for an hour you came home and made waffles 🙂  It kinda sounds like something I did recently, except it was eat HALF a bag of those dang cadbury mini eggs with the crunchy candy shell.  Ugh…an hour of hard work out the window for me every time. #noregrets

Oh my gosh you had me laughing because I just started lifting weights last week and it has been before we were married since I have done this much physical activity!!  So I totally understand because I feel like that is all I am doing is eating.  It is probably a little counterproductive but oh well.  Anyway these waffle sticks are sheer genius!!  And #TeamLazy sign me up!  Pinned!!
