So. You know Ashton right? From Something Swanky?
I know, big surprise. I know her quite well, actually.
We’ve been working on that teeny, tiny project together. You know the one.
You’re probably tired of hearing about it. I know. But it’s what I’ve been devoting the majority of my days to lately.
It’s quite a nice distraction actually. Like, vacuum….or update attendance? Clean the toilets….or email sponsors?
{Really, if you give me any other chore besides cleaning? I’ll pick the “other” every time.}
Don’t worry this post isn’t all about Online BlogCon. Again.
Well, that’s a little lie. It’s not totally about Online BlogCon.
Really, it’s about these Cookie Butter Pretzel Granola Bites.
Or, a party in your mouth. Whatever.
See, Ashton is having a party today. A cookie butter party! A couple weeks ago, when I posted my S’mores Granola with the graham cracker butter, she texted me.
She had just made Oreo butter. Like, it was still on her counter.
Sometimes we talk telepathically in our subconscious, I know it.
Anyway, last week she mentioned having a cookie butter party. So of course I’m going to join in!
I wanted to make cookie butter from some magical cookie and have all your jaws drop while looking at your computer tonight.
But, yeah. I didn’t have time. I did, however, have these babies that I made too long ago and forgot to post.

They’re like little graham balls. With pretzels. And cookie butter. And then rolled in powdered sugar, kinda like muddy buddies.
Sweet, crunchy, soft, and good.

Cookie Butter Pretzel Granola Bites
Ingredients
- 1/3 cup honey
- 1/3 cup Cookie Butter (or Biscoff)
- 3 tablespoons butter
- 1 cup pretzels , crushed
- 1 1/2 cups rolled oats
- 2 ounces white chocolate
- 1 cup powdered sugar , optional
Instructions
- Place honey, cookie butter, butter, and white chocolate in a large microwave safe bowl. Heat on HIGH for about 1 minute, stirring every 15 seconds, until melted and smooth. Stir in crushed pretzels and oats.
- Roll into bite-sized balls and place on wax paper. Place powdered sugar in a small bowl. If desired, roll balls in the powdered sugar to coat. Chill in refrigerator until set, about 15 minutes. (You may need a second dip in the powdered sugar if too much melts into the balls during cooling.)
