Brownie Bites are my favorite thing to buy at the store, but these are even better because they are homemade brownie bites!. They are simple, easy, and good for any occasion. The best thing about these homemade bites are how many different ways you can make them!

Easy Brownie Bites 3 Ways

These are one of my favorite brownie recipes because they are a blank canvas for you to have fun with! With this specific recipe I love getting candy, like Rolos or Reese’s Peanut Butter Cups, and sticking them in the center of the brownie (like a blossom cookie). Topping them with ganache and sprinkles is also yummy too!

I make these brownies in a mini muffin pan because it is the perfect size and shape to create these bites. I recommend getting at least the 24-muffin size or the 48-muffin if you plan to make lots of mini muffins or other mini recipes. These mini brownies are so good, they’ll be gone in just two bites!

Important Ingredients Needed

  • Baking Chocolate: Coarsely chopped – this is found in the baking aisle
  • Unsalted Butter: The combination of butter and chocolate makes these SO fudgy.
  • Toppings: 40-48 bite sized candies Rolos, miniature Reese’s Peanut Butter Cups, mini Milky Ways, etc., unwrapped. Chocolate Chips or Sprinkles. 

How to make Brownie Bites

  • Melt chocolate together with butter in the microwave. This will take 2-3 minutes and I recommend stirring after a minute and every 30 seconds thereafter.
  • Stir in sugar. Add eggs, vanilla, and cocoa and stir well. Add salt and flour and stir carefully.
  • Place about 1 heaping tablespoon of batter in each muffin cup. Bake for 10-12 minutes, until a toothpick comes out only slightly dirty from the center of the brownie.
  • If you are topping the brownie bites with candies, unwrap them while the brownies are baking. As soon as the brownie bites come out of the oven, press one candy on the top of each brownie bite, pressing slightly. Let them cool completely before removing from the pans.
  • If you are topping them with ganache, let them cool completely then remove from the pans. Make the ganache by placing the chocolate chips and cream in a microwave safe measuring cup or bowl. Heat in 30 second increments, stirring between each, until the chocolate is melted and smooth. It will be thick, like frosting. Frost each brownie bite, then top with sprinkles.

Expert Tips

  • To make removing your brownie bites from the pan easy, make sure you use a nonstick pan or spray with cooking spray (I like the kind with flour). 
  • If they aren’t completely cooled it will be hard to remove them from the pan. Run a sharp knife around the edges of the brownie bite, then pop it out of the pan. If it rips, then they aren’t cool enough. I suggest chilling the bites until completely cold before removing from the pans. Store at room temperature in an airtight container or freeze for up to 3 months.
  • This recipe calls for melting chocolate with butter and then adding the rest of the ingredients. If you don’t feel like spending the time melting the chocolate, you can always use my homemade brownie mix for these bites. 
  • Some other fun ways to spruce up these bites is by mixing M&Ms into the batter, or topping with caramel and cream cheese frosting.

They most likely aren’t fully cooked, so give them a few more minutes.

Can you freeze Brownie Bites?

Yes you can! Make sure to freeze in an airtight container. 

How long do you bake Brownie Bites? 

Bake for 10-12 minutes, until a toothpick comes out only slightly dirty from the center of the brownie.

  • 1 cup (170g) chocolate chips
  • 3 tablespoons (45ml) heavy whipping cream
  • Sprinkles

Instructions

  • Preheat oven to 350°F. Spray mini muffin pans with nonstick cooking spray with flour or line with liners.

Anyone else coming up way short on the 40-48 estimate?  I have a 48 mini cupcake pan and I decided to make a double recipe because I needed closer to 80 bites for a big potluck.  Made the double batch and barely filled 40 cups??!!  Didn’t even “heap” my tablespoons full when filling, as is suggested.  How can it be so far off to be half what it should have been?

    1. I’ve never tried olive oil but I’ve used vegetable oil so I think it should work. Let me know how it turns out!

  4. Made just plain style brownies for brownie kebabs and these worked a treat! I used gluten free plain flour and coconut sugar and cacao as substitutes and i don’t think my husband is happy that he could only have 1 and has to wait 3 days till xmas to enjoy more 🙂 FAB FAB FAB!! Merry Xmas!
