Avocado Chicken Salad Sandwiches – an easy chicken salad recipe with avocado! There’s no mayo in this recipe – it uses a combination of yogurt and avocado for a perfect protein packed chicken salad! It’s creamy and the perfect lunch!

I don’t like mayonnaise so I’ve never actually had regular chicken salad – I can’t bring myself to try it – but this is an easy chicken salad without mayo and it has avocado and lots of southwestern flavors. I could eat this all day long! Fresh, savory, and packed with protein this will become your favorite avocado chicken salad recipe!

Chicken Salad Ingredients
- Chicken – This should be already cooked and either shredded or cubed. Rotisserie Chicken is great too!
- Avocado – medium-sized and ripe avocado
- Greek yogurt – nonfat, plain yogurt is best
- Salsa – Use your favorite brand

How to Make Chicken Avocado Salad
- You can use leftover or rotisserie chicken breasts – just shred them for the salad.
- I love mashing avocado with a potato masher in a large bowl and then adding the other ingredients.
- I add salsa, salt, and pepper so I don’t need many other spices. You could even add cilantro!
- You can enjoy this on a bed of lettuce or make it into a sandwich with tomato. I also sometimes add bacon! And we love a soft bun (gluten-free if needed).

Storing Leftovers
Store chicken salad in an airtight container in the refrigerator. I don’t recommend freezing it; it’s best eaten within a few days.
Avocado Chicken Salad Sandwiches Recipe

Ingredients
- 2 cups cooked chicken, (shredded or cubed, see note)
- 1 medium avocado
- ½ cup plain non-fat Greek yogurt
- ¼ cup salsa
- ½ teaspoon salt, (or to taste)
- ¼ teaspoon pepper
- 8 slices Bread, (or soft rolls)
- Lettuce, tomato, and/or onion, optional
Instructions
- Shred or cube the chicken as desired.
- Remove the flesh from the avocado and place in a medium bowl. Mash with a potato masher. Stir in yogurt, salsa, salt, and pepper. Stir in chicken.
- Serve chicken salad on a soft roll or toasted sliced bread. Top with lettuce, tomato, and onion if you wish!

I know how you felt- I visited home from my Florida internship a few weeks ago and had to fly all by myself; parking and everything. It was a very different and strange experience! I don’t like chicken salad that much because I hate mayo, so it’s neat to see it done with greek yogurt- I’ll definitely have to give it a try sometime when the craving hits or when my friends or family want it!
Totally – that’s my hang-up on most creamy things – the mayo. Greek yogurt is the perfect sub!

You can also find canned chicken breast that’s already cut cup/shredded (like tuna in a can). I LOVE chicken salad. This sounds like a healthier option….especially since it uses Greek yogurt instead of mayo. This is exactly what I’m looking for right now! So that is for not waiting to share it. 🙂
