Blueberry Baked Oatmeal

I don’t like oatmeal. But I like this Blueberry Baked Oatmeal.

That’s kind of a big statement, coming from someone like me.

Happy New Year!! I hope you all had a safe and fun New Year’s Eve. What did you do? What did you eat? We did our normal thing: we watched the ball drop at 9pm (Pacific time) and then went to bed.

I am such an old fuddy-duddy sometimes. Whatever, at least my husband and I match. 😉

Soooo, now that it’s January are you taking off the feed bag? Putting away the yoga pants for all day and putting on…yoga pants for exercise? Me too.

But you know what you need, no matter what? Breakfast.

How about some baked oatmeal for breakfast? With blueberries? Yes?

I’m not an oatmeal lover. In fact, I’m not much of a breakfast lover. 99% of the time I’m not hungry in the morning or I’m too rushed to eat. But I have to put something in my stomach before I work out or I get dizzy and nauseous. Usually I drink a smoothie. But sometimes? I don’t feel like a smoothie. I want to chew.

It’s those days I wished I liked oatmeal. But now? Now I’ve found an oatmeal I actually want to eat: baked oatmeal.

The problem I have with regular cooked oatmeal is the texture. Y’all know I have lots of texture issues and hot gloppy cereal is one of them. But this baked oatmeal is more like a soft granola bar. I like granola bars.

Therefore, I like baked oatmeal.

This is definitely more indulgent than a smoothie…but it tastes better and is more satisfying too. And it’s not as bad as eating a plate of pancakes, waffles, or even traditional baked oatmeal. I’ve changed up the regular butter and sugar-ladden baked version for something a little lighter.

This recipe has no butter or oil. Instead, I used unsweetened applesauce. Unsweetened applesauce is my healthier baking secret weapon. I’ve been adding it to everything lately (recipes coming soon). And even though there is sugar in this recipe, I used less of it because the applesauce is sweet, even though it’s unsweetened.

Instead of regular milk, I used unsweetened vanilla almond milk in this recipe. I’ve been using almond milk for years now and I prefer it to milk. But if you like milk, use nonfat. I haven’t tried this with soy or coconut milk, but I’m fairly sure it’ll work just fine.

I’m not much of a fruit-in-food person, but I blueberries were the perfect touch in this oatmeal. I buy mini frozen blueberries (often labeled “wild”, I get mine at Trader Joe’s) but you can use regular size frozen or fresh.

This oatmeal is good plain, but it’s even better with syrup. The syrup is optional if you’re really counting calories, but if you like syrup, go for it. You don’t have to use maple syrup; we use reduced calorie syrup most often in my house. If you’re feeling like being indulgent…pour it on. Alternately, you can serve it with fresh fruit or a dose of vanilla yogurt on top.

Enjoy this oatmeal for breakfast or enjoy it like I do – after my workout. I always want something after I exercise and I don’t want an apple. I want something hearty I can chew, and this fits the bill.

The other thing I love about this baked oatmeal is that you can portion and freeze it. Then, like me, on those days I want more than a smoothie but I don’t have any time, I just reheat. It takes less time than my blender, and I can actually chew something.

Plus…it’s pretty. So not only is this good for a hearty and healthier breakfast, but it’s a great brunch or potluck dish too.

It’s a double duty dish. I think I need to make it my resolution to make more of those.

Blueberry Baked Oatmeal

Yield: 8 servings

Total Time: 40 minutes

Baked oatmeal that tastes like a cookie and is healthy? This Blueberry Baked Oatmeal makes the best breakfast!

Ingredients:

  • 2 eggs
  • 1/2 cup applesauce (unsweetened)
  • 1/3 cup brown sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 3 cups old fashioned oats
  • 1 cup milk (nonfat or almond milk, vanilla unsweetened is what I use)
  • 1 cup fresh or frozen blueberries, see note

Directions:

  1. Preheat oven to 350°F. Spray an 11x7 or a 9x13 pan with nonstick cooking spray.
  2. Whisk eggs, applesauce, brown sugar, and vanilla until smooth. Stir in cinnamon, salt, and baking powder. Stir in oats and milk. Gently fold in blueberries. Spread in prepared pan.
  3. Bake for 28-34 minutes until oatmeal is browned and not jiggly in the center. Cool slightly before serving. Serve with syrup and/or fruit or vanilla yogurt.
  4. Store in refrigerator up to 2 days. You can also portion and freeze for quick morning breakfasts!

Notes:

I use the wild blueberries that are tiny, if you’re using regular sized blueberries you may want to use more of them, to taste.

  1. I probably ate oatmeal 360 days out of 2014. Call me crazy, but I love it! This recipe looks fantastic– I love how it does look like soft granola bars, which probably makes them pretty portable!?!?!  Thanks for the recipe!

    As for NYE plans, my mom and I made Ice Cream Sundaes, watched/ slept through a Christmas movie and then went to bed before midnight. I loved it all the same. Hope you have a great 2015!

    I don’t like hot, gloopy cereal either, YUK! I didn’t like oatmeal for so many years, but then I discovered baked – it’s soooo good! I’ll definitely be trying this lightened up version, my jeans are not loving me right now!

    As for NYE, hubs and I enjoyed some Russian potato salad (it’s a tradition) and my 3-ingredient soufflé cheesecake. We stayed up will 1am watching TV shows on Netflix. Haha

  16. We were in bed by 10:30 (the girls were asleep the minute their heads hit the pillows at 9:00, I think), and I wish I had this to eat this morning!  I love oatmeal, but don’t always have time to cook it in the morning.  I will definitely try this, and have it ready ahead of time!

  17. This recipe sounds so yummy! Since we aren’t big fans of blue berries and they aren’t something I generally have on hand, I’m wondering if raisins could be used as a substitution?       Yes! I think any fruit substitution would work. Raisins, craisins, strawberries, you name it! As for plumping, yes, if you like them plump you can do that. I’m not a raisin eater so I’m not sure how that would work, but if you add them plump they should just cook in the oatmeal like the blueberries do.

      I slice it into squares and freeze it in ziploc bags. You can leave it in the fridge overnight to defrost, then microwave it. Or (if you’re like me and forget to think ahead) just microwave it frozen!

  24. Oh, I LOVE breakfast. My favorite is breakfast for dinner, actually. But I guess that’s not the same thing. Oatmeal is a big deal over here. It’s actually the ONLY thing Paul can make – I’ll see if he can tackle this one!

  27. I loooove breakfast foods, but like you, I’m weird about textures and I had that mushy oatmeal stuff. Haha:) I can get behind some baked oatmeal if it’s the texture of granola bars though! I will definitely have to try this, maybe it will change my mind about oatmeal!

  36. Just made a batch of these and they are delicious fresh from the oven!  I have been looking for healthy recipes for my husband and I to use for grab and go breakfasts during the week. Not super sweet (but you could probably adjust to your taste), which I prefer and perfect for a quick breakfast or snack.  These are easy, smell amazing cooking and we plan to make more to freeze for later on.  I only had the larger blueberries on hand so I used about a half cup more and it was just right.  Thanks!

  37. I have a ton of steel cut oatmeal in my freezer. I’m assuming I should probably precook it, then adjust baking time if I were to try this recipe? What do you think?

        I’ve never used steel cut oats. If they take longer to bake, you’ll need more time. Check the liquid, do they usually need more to cook up?

  39. Could you do this with dried blueberries? I normally don’t buy regular blueberries because the price is crazy, but I always keep dried fruit on hand.

  41. Is there any way this could be done without the brown sugar? If I were to cut it out completely do you think it would lack a lot of flavor or could I just double the applesauce instead. I’m not big on a lot of sugar!

  42. I’ve been looking for a mid morning snack for on the go and work that incorporates oatmeal, as I don’t really like the texture of hot oatmeal as cereal either. This just came out of the oven and it is awesome! I topped with two spoonfuls of Plain Greek yogurt and cinnamon! Deliscious.

I’ve been trying to make baked oatmeal a weekly staple, and I thought it’d be great to do this blueberry version for the health benefits. 🙂 I was skeptical about getting the wild blueberries, as I assumed they’d be hard to find and more expensive. But lo and behold, I found them in the second store I checked right next to the normal blueberries–not only the same price, but on sale, too! Made my night. Anyway, I love how quickly and easily baked oatmeal comes together, and it gives me a lot of good, healthy food to eat on through the week. i was too lazy to make overnight oats this week and have just been eating this. It’s one of the stronger-tasting baked oatmeals I’ve made, probably because of the brown sugar, but it’s definitely not overpowering or anything. It’s a healthy treat. 🙂 Thanks so much for the recipe!

  46. I made this tonight. Was very disappointed. The oatmeal was still raw. It was very chewy. I think that maybe letting it set for a while before baking it would solve this problem. I make a breakfast oatmeal dish using oatmeal and fat free Greek yogurt mixing them together and letting them set in refrigerator overnight. It is not chewy or mushy.

      Hi Pearl, I’m sorry that happened. How long did you bake it? Possibly it needed to be baked longer? I do remember it being chewy and full of texture, but if that isn’t your thing you could use quick cooking oats instead of old-fashioned. Those will be less chewy and more oatmeal-like. The breakfast you mentioned – that’s not baked, right? I think if you’re looking for that texture, quick cook is the way to go! (If you don’t have quick cooking oats, you can make them in about 10 seconds – just put a bunch of old fashioned oats in a blender or food processor and blend just a few seconds to chop them up. Viola – quick cooking!)
