Cookies ‘n Mint Ice Cream is perfect for these hot summer days…and you don’t need a machine! Just a few simple ingredients create a delicious ice cream, made even better with the addition of Cool Mint Cream Oreos!

Sometimes I reallllly hate being an early bird. I’m a morning person, through and through. Up with the birds…and as soon as 8pm hits, I’m pretty much no good for anything. I’m 35…going on 70. I’ve pretty much always been this way.

As a teen, it really sucked. I had a morning curfew: I could not, under any circumstances, call any of my friends before 10am. I’d be sitting there in my room, watching X-files reruns on USA just willing the clock to tick past 8:35…then 9:50…then finally! At 10am I could make my first phone call…and wake whomever was on the other end.

It’s only gotten worse as I’ve become an adult…and a parent. Especially when Jordan takes after me and her father, so 6am is sleeping in for her.

I, in fact, sleep in the most in my family. 6am is my preferred wake-up time. You don’t want to know what time my husband gets up. One time, a friend who plays words with friends with him wondered about the time being off on her app…until I told her that, no, its’ true. He does play it at 4am.

Poor Jordan never had a chance.

Oh well, while everyone is still sleeping in the morning, I get a lot of things done. I can make ice cream without a machine, and it’ll be frozen by dinner.

Yesterday I asked which recipe I should post today: ice cream or cupcakes…and the result was a resounding ice cream. Of course – it’s summer. It’s hot. Who wants to bake?

This ice cream is the most simple, easiest ice cream you’ll ever make.

I call it Cookies ‘n Mint Ice Cream…but the other name for it would be Jordan’s Ice Cream. She loves mint. It’s her favorite flavor combo. Her birthday cake was mint. She asks for mint everything…including ice cream.

I am always happy to oblige her. Chocolate + Mint is one of my favs too!

The mint in this ice cream is exponentially mintier because I used Cool Mint Oreos in it. Mint ice cream + Mint cookies = Mint squared. Mint to the second power. Mintalicious.

Is it weird to say that this ice cream is more refreshing than regular ice cream? Because it’s mint? For some reason, cool mint flavor in an ice cream just screams refreshing to me. Cool mint ice cream to cool you off in this sweltering heat.

Oh, you’re not having sweltering heat? Come visit me and I’ll give you some. ;)

But don’t come too late at night. Come early in the morning.

Easy Cookies ‘n Mint Ice Cream

Easy Cookies ‘n Mint Ice Cream

A minty ice cream filled with Oreos - made without an ice cream machine!


  • 10 Cool Mint Cream Oreos
  • 1 tablespoon butter spread (or butter, softened)
  • 1 can (14 ounces) fat-free sweetened condensed milk
  • 1/2 teaspoon peppermint extract
  • 8 ounces fat-free Cool Whip, thawed
  • Green food coloring


  1. Pulse Oreos in a food processor until you get a fine crumb. Add butter and pulse until chunks form. Set aside.
  2. Stir together sweetened condensed milk and peppermint extract in a large bowl. (I like to do this in a tupperware, so that it can go straight to the freezer without me having to wash anything!) Fold in Cool Whip gently. Add 3-5 drops green food coloring, if desired, to get the green “mint” color you want.
  3. Add the Oreo crumbs to the ice cream and gently fold them in. Don’t mix too much or there won’t be chunks of them to bite into.
  4. Cover and freeze for at least 4 hours, but overnight is best. Enjoy!


You can substitute regular Cool Whip for the fat-free and regular SCM for the fat-free kind. If you prefer not to use Cool Whip, you can use fresh whipped cream by beating 2 cups cold heavy whipping cream until stiff peaks form and sub it for the whipped topping.

    Your family sounds like mine! My brother and I had to stay in our rooms until 6 am in the mornings. No ifs, ands, or buts. (Especially on Christmas morning!) Mom and Dad got up earlier than that, but they needed their “adult” time to go running or drink coffee.

    And your ice cream looks lovely! We grew up on mint chocolate chip (Mom’s favorite flavor), so it brings back good memories. It’s one of the hardest things to photograph though — I just tried to do froyo, and it melts so quickly in this Sac heat!

    P.S. What font did you use for the “Cookies ‘n Mint” in your top photo? It’s so cute!

    Agg! It looks So refreshing and cool! It was 105 degrees today, so this would’ve been perfect. I haven’t seen the SCM and cool whip combo and really want to now. This is so easy, I have no excuses right? Wow, mint and ice cream sound so perfect right now, it isn’t even funny! I always am so impressed by your photography and these are no exception!

    I’m a morning person too and oh man I feel your pain. I always got dirty looks from my parents for waking them up as a child and I had that morning curfew in high school for my friends too! So funny, I’d have to sit and wait for a time that would seem appropriate to them (oftentimes I even needed to wait until after noon! Lazies!)

    Lol I was the total opposite of you when I was a teenager, Dorothy. I’d be up until 3 am and sleep until noon (I would’ve been one of those friends giving you an am curfew). But now that I’m basically a senior citizen in a 30-some-odd year old body, I love going to bed early and getting up early. I need to spend my early waking hours making this incredible ice cream! I love that I don’t need an ice cream maker – how easy is this?!
