Peanut Butter Pupcakes {Whatever Friday}

Happy Friday y’all!

Ginger’s 10th birthday was on Tuesday, and after posting to Instagram and Facebook photos of her with her pupcake, I was asked several times if I would post the recipe. So here you all go!

Ginger loved these cupcakes, BTW. Like, loved them so much she’d have eaten my arm if I didn’t move fast enough.

Peanut Butter Pupcakes {Whatever Friday}

Adapted from Run DMT.

Ingredients

    For the Cupcake
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 cup peanut butter
  • 1/4 cup oil
  • 1 mashed banana
  • 1/3 cup honey
  • 1 egg
  • For the Frosting
  • 2 ounces cream cheese, softened
  • 1/4 cup peanut butter
  • splash of milk, about 1/2-1 teaspoon

Instructions

  1. Preheat oven to 350 degrees. Spray a muffin pan with cooking spray (6 cavities). You can also use liners, if you want.
  2. Mix peanut butter, oil, banana, and honey with a mixer. Beat in egg, flour, baking soda, and baking powder until combined. Evenly distribute between 6 cavities of your muffin pan. Bake 15-20 minutes, until browned and a toothpick inserted in the center comes out clean. Cool completely before frosting.
  3. To frost, stir cream cheese, peanut butter, and enough milk for a spreadable consistency. Spread on cupcakes.

1. So whose brilliant idea was it for me to plan two huge birthday parties in a one week span? Oh, it was my idea? I’m a genius.

Aaaand…I rounded up some football sweets for your party this weekend.

I also began to realllly wish there was some way to pause time so that I could work 24 hours and still sleep and be a good mom.

3. I am SO in the mood for these appetizers from Recipe Girl. I mean…OMG.

4. Blogger tip: if you make a recipe using a product (say, you make lemon sweet rolls out of Crescent Rolls), post the link and a photo on the company’s Facebook page. They may decide to share it!

5. Dinners…well we were boring this week. Lots of protein and veggies. But I did make Tilapia ala Aimee. It was really, really good, and even Jordan cleared her plate. (WIN!)

6. Jordan got the class pet this week. Seriously. WHY do they send a disgusting stuffed animal home during flu and l*** season? Dude spend 20 minutes in a hot dryer when we got home, but I still wanted to bleach my car.

7. All of a sudden Valentine’s Day is in two weeks. And before yesterday I had NO more Valentine recipes to share. Then I kind of went on a frenzy. Red and pink coming at you next week!

8. So this is how I’ve been feeling this week. {FYI, there is a curse word in that link. If you don’t like cursing…don’t click.}

9. Have I told you all lately how much I love you? Thanks for visiting me, for reading, for commenting, and emailing. You make my heart happy. :)

    I don’t have a dog, but I will let a friend know about this recipe. She has a Service Shar-pei and I know she likes to make him treats for a job well-done. He is also a therapy dog and goes to hospitals to cheer kids with cancer up…he’s my hero and deserves this wonderful treat!!

    Oh Little J and her little karaoke machine–she’s so cute! And thanks so much for those pupcakes! Mannie and Oreo knew exactly what was up when I came home with them and basically stalked me and hounded me until I gave them some. Happy Birthday to my sweet, little princess Ginger!

    Let me just say that the pupcake is really cool….but it would take my puppies at least a week to eat that. I think it may even outweigh Zeke.

    I’d have to cut the recipe in 1/4’s maybe? and make mini-mini-mini pupcakes!

      You could definitely cut it in half – or make mini cupcakes and freeze! Ginger had no trouble, lol.

    Was I the only one who thought Ginger was your daughter and that was a pretty hastily iced cupcake for a food blog?
    Oooooh, Ginger is a DOG. Pup cakes, I get it now. Wow, that was really cute dog food, my Molly would be jealous if she had internet access. And thumbs, she would need thumbs. OK, I’m safe she won’t ever see the pup cakes.

    Dorothy my daughter was person of the week at school and I had to send in all this stuff and now i know that it will all come back covered in germs. Better have more Vitamin C or something I guess!

    I love it and guess what? My son used to call cupcakes “pupcakes” when he was little! I have a video of him saying “I love eating pupcakes!” and it is so stinkin cute!
