Need a fun after school snack that’s easy, but also healthy? How about some Ice Cream Apple Dip made with yogurt and International Delight Coffee Creamer!

After school snacks. I kind of hate them. Is it just me?

Jordan eats lunch at 11:15 at her school. So, by the time 2:30 rolls around and she’s home, she’s usually starving. She wants crackers and treats and juice, and I want her to have fruit, something with a little protein, and water.

For some reason, she thinks it’s okay to eat treats all day long. I have no idea why.

Usually I sort of give in because I want to make her happy after school, especially during those first few weeks when the effort of being at school and learning for so many hours is just too much. Do any other kids ramp up the crank factor during the first few weeks of school?

In an effort to find a solution to my after school snack problem, one that would satisfy her want of a sweet treat and my want to get her to eat somethin good for her, I created probably the easiest recipe ever: Ice Cream Apple Dip.

This dip has only three ingredients, and it’s low-fat and is filled with protein. Plus, it’s served with apples, forcing fruit intake.

{Although…it’s pretty good with a spoon too. Not that I’d know or anything…}

This Ice Cream Apple Dip is made with non-fat vanilla greek-style yogurt and coffee creamer. Yes, I said coffee creamer. Did you know that there are so many things you can do with coffee creamer besides put it in your coffee? It’s mind boggling. (One idea? No-bake cookies!)

I call this dip “Ice Cream” Apple Dip because I used the Cold Stone flavor of coffee creamer from International Delight. They have a whole new line of sweet coffee creamers based on favorite flavors from Cold Stone. Have you seen the new flavors yet? My Walmart was out of the three I wanted to try: Founder’s Favorite, Not For Cookie, and Churro Caramel, so I used the Sweet Cream.

But the beauty of this dip recipe is that you can use any of the flavors you want. All of them taste like delicious ice cream flavors…so all of them make an amazing Ice Cream Apple Dip!

This is the perfect snack to carry your kids through an afternoon of sports and homework. The protein from the greek yogurt and the vitamins from the apples will satisfy your “healthy snack” requirement but they’ll think they get to eat ice cream. A win-win!

And it might even cure the first week crank. That would be truly magical, wouldn’t it?

Ingredients
 

  • 1/2 cup International Delight Cold Stone Creamer any flavor
  • 1/2 cup nonfat vanilla greek-style yogurt or you could use regular
  • 1/3 cup mini chocolate chips
  • Apple slices for dipping

Instructions

  • Whisk creamer and yogurt together in serving bowl. Stir in chocolate chips. Serve with apples.
