Skinny Ice Cream Sandwiches

Thanks to Dole and Yonannas, these Skinny Ice Cream Sandwiches are made with frozen bananas – so they’re so much healthier than regular ice cream sandwiches. The perfect treat for summer entertaining!

Raise your hand if you eat a too much when you go to parties. Heck, I eat too much on a random Tuesday…let alone at a party full of delicious food and drinks. Indulgence can be (and usually is) my middle name.

So…enter these Skinny Ice Cream Sandwiches. It’s the party treat that you can eat over and over…with way less guilt! It’s perfect if you’re like me and finally put on a bathing suit and then immediately took it right back off.

{I mean, it’s 110 outside…maybe I should just stay inside and skip the pool. Too hot to be in the water anyway.}

What’s even better about these Skinny Ice Cream Sandwiches is that they have only three ingredients, and that’s counting the sprinkles. Even better than that is they come together in about 10 minutes plus chilling time. If you have guests coming over last minute and you need a treat…this is the one you need to make.

Especially if you live somewhere like I do…where it’s 110 today. YES, I said 110. And I know I live in Sacramento, and it’s always hot here in summer, but OMG. 110? Really?

So…what makes these skinny? They have a secret. You ready?

They aren’t really made of ice cream. They’re made with frozen Dole bananas!

Okay, so you know the frozen banana soft-serve trick, right? Where you process frozen banana chunks and it turns into ice cream? I made Banana Walnut Chip ice cream awhile back and it was so good. Refreshing, frozen, and much healthier than regular ice cream. For that recipe, I used my food processor. For this one, I used my new toy:

A Yonanas Frozen Dessert Maker.

It’s such a cool kitchen gadget – you just add your frozen bananas and any other frozen fruit or mix-ins and it gives you soft-serve ice cream in seconds flat.

Since I was having some people over, I wanted to make Ice Cream Sandwiches instead of ice cream – way more portable and easier to serve for company!

Why was I having people over? Well, to celebrate Dole and their Peel the Love summer tour!

Did you know that Dole has a food truck tour going on? The Peel the Love Food Truck Tour is taking place across the country all summer long. You can hit up the truck at a location near you to taste some of the wonderful things you can make with bananas. The Peel the Love Truck was in Sacramento while I was in Austin for BlogHer, so I missed out on seeing it, but if you happen to be in Phoenix this weekend you can go check them out.

The truck is also stopping in Houston, Des Moines, Baltimore, and New York City all summer long. Check out the Peel the Love website for all the locations! Then you can pick up some fabulous recipes, and get some bananas, so you can make some of these Skinny Ice Cream Sandwiches too!

Like I said, these Skinny Ice Cream Sandwiches come together in minutes. You simply process your frozen bananas into a bowl. If the mixture is too soft for scooping, freeze it for a bit. (If you’re using the Yonanas maker, it will be the perfect thickness. If you’re using a food processor, you may need to freeze it before making the sandwiches because the heat from the processor can make it melt quicker!)

These sandwiches are made with reduced-fat vanilla cookies, the kind you’d make banana pudding with. Feel free to use your favorite low-fat cookie! Then, because my friends came over for a pre-4th of July hangout, I rolled these in red, white, and blue jimmies. Use your favorite colors!

Once they’ve been refrozen, you can serve at a party, or freeze in a ziploc bag. The leftovers stayed fresh while frozen until they finally disappeared!

Skinny Ice Cream Sandwiches – the perfect skinny party treat!

Skinny Ice Cream Sandwiches

Skinny Ice Cream Sandwiches

  • 2 bananas, sliced and frozen
  • About 36 reduced fat vanilla cookies
  • Sprinkles, if desired

  1. A few hours ahead of making these ice cream sandwiches (or the night before), slice your bananas and freeze them.
  2. When ready to assemble ice cream sandwiches, line a cookie sheet with wax paper. Set out your cookies. Place sprinkles on a plate or in a shallow bowl.
  3. Place frozen bananas in a Yonanas dessert maker and process to make ice cream. If you don't have a Yonanas, you can use a food processor. (If you're using a food processor, the mixture may end up too soft. If it won't hold up to scooping, freeze it for awhile before making your ice cream sandwiches.)
  4. Scoop one tablespoon of frozen banana "ice cream" on half of the cookies. Top with the remaining cookies. Roll in sprinkles. Place back on cookie sheet and freeze for about an hour, then you can place them in a ziploc bag for storing in the freezer.

Enjoy, and Happy 4th of July!

  5. These look so fun and YUMMY Dorothy! Love it!

  6. I’m right there with you… 110°?? It’s been over 100° for the past 4 days, and it won’t drop back down to 97° until Friday. (Yes, I have a countdown going.) I have to set an alarm on the weekends just so I can run outside before passing out at 9 am from heat exhaustion! Sacramento is hot, but this is ridiculous. If I wanted heat like this, I would’ve moved to Phoenix! (And followed that Banana Truck! :) )

    • Right! I lived in Phoenix for 5 years and this is what it was like…every day. But drier. UGH!

      • At least in Phoenix, most of the stores had those little misters on their awnings so you could stay cooler as you walked around the city! (My aunt lived in Scottsdale, and my grandparents still live in southern Arizona. And yes, we did visit them for a couple of 4th of Julys — crazy 120° heat!)

  7. Love how festive these look! I need to try making ice cream with bananas in it. Then, maybe I can eat even more!

  8. These look pretty darn good! And I’m sold on the skinny!!

  9. These look so good, Dorothy! I love how you decorate them. It’s great that they are dairy free since I am trying to stay away from dairy since it seems to bother me. Pinned!

    Have a wonderful afternoon!

  10. Yessssss. I love that you used the frozen banana “ice cream” for these ADORABLE sandwiches!!

  14. So stinkin’ cute & adorable! And they use sprinkles…fabulous!

  15. Too easy and too cute! Sprinkles make everything better and you can match them with the holiday. Great pictures, too!!!

  18. Now I want a Yonanas machine! And about 18 of these cutie patootie sammies.

  19. So cute! Love skinny ice cream sandwiches… totally acceptable to have twice as many, right?

  20. Just a note for anyone who doesn’t have the machine: YOU DON’T NEED ONE! I’m sure they make things a bit easier if they are easy to clean, but you can certainly use your food processor – or if you have a heavy-duty blender like Vita Mix or Blend Tec you can make the ‘ice cream’ in that!!!

    • Totally! I put in the instructions and in the post that you can use a food processor if you don’t have a Yonanas machine!

      • Oh, oops – must have missed that part! These are so cute! I love the ice cream in and of itself – but this is a new great way to enjoy it!! I want to make these when we get our Japanese exchange students – I think it will be fun! I would like to find a healthy wafer cookie recipe to make at home and use for the cookies!

  21. So darn cute!! I want all of these. Plus, I love banana “ice cream”!

  22. Oh my goodness, those are the CUTEST ice cream sandwiches EVER. And yeah…guess what I’m buying ASAP? :-) My blender isn’t powerful enough to process frozen bananas, so I absolutely need one of these Yonanas machines. Headed out to Bed, Bath and Beyond this week to get one (as my husband rolls his eyes and asks where were are putting another kitchen gadget).

  23. This is so easy and so delicious! Wow, I’ll be making them this weekend :)

  24. I my goodness these might be the cutest thing ever! Yum!
