Amaretto Coffee Creamer No Bake Cookies are perfect when you’re craving cookies on a hot day. These No Bake Cookies are filled with almond flavor and Amaretto Coffee Creamer!

If you could only choose one flavor to put in your cookies and sweets for the rest of your life, what would it be? Vanilla? Hazelnut? Coconut? Lemon?

Mine would be almond. Almond extract is totally intoxicating to me. Sometimes I go to the pantry just to sniff the bottle. That’s not weird…right?

I remember the first time I made my favorite sugar cookie recipe, it called for almond extract. I scoffed and was all, “pffft. I’m using vanilla.” I did that for years until one day, I tried almond extract. And I was hooked. Addicted!

I love putting almond flavoring in just about everything, which is why I wonder why it took me so long to discover Amaretto liqueur. I know I’ve had it in things before but a few months ago I finally bought myself a bottle and promptly made fudge with it.

The problem with using actual Amaretto in desserts is that the treats become adults-only. This is something that my daughter is NOT happy about. If I make treats, she expects to have one or seven.

When I saw that International Delight made Amaretto Coffee creamer, I was instantly hooked. I could have amaretto for breakfast and no one would be the wiser? That’s pretty genius, if you ask me.

In typical Dorothy Recipe Creation fashion, I decided to make 100 actual things before I made even one. Cake! Cheesecake! Cookies! Pie! Candy! Cookies!

My mind was All. Over. The. Place. trying to decide what to make with the Amaretto Coffee Creamer. I had plans to make some sort of elaborate baked concoction and then it decided to become summer in May in Sacramento. It’s been in the 90s for what seems like weeks now. I did NOT want to turn on my oven.

The obvious decision was to make no bake cookies. Obviously!

I’ve never made no bakes before. I’ve eaten them plenty and seen them around the internet. (Most recently, my BFF Aimee made some peanut butter ones…OMG!)

All of the no bake cookie recipes I saw use milk as one of the ingredients. So…why not substitute your favorite flavor of coffee creamer instead?

Is anyone else smacking their forehead right now and saying, “Oh the possibilities!!???” Because I am!

To make the cookies, you cook together butter, sugar, creamer and flavorings, and then add in some quick cook oatmeal. That’s the binder that gives the cookies their oomph. Make sure it’s quick cook oatmeal – or it will be raw and probably somewhat unappetizing!

I also added almonds to mine (duh, amaretto!) and some sprinkles. The sprinkles give the cookies some color. Otherwise they’re just a little…brown. And besides…sprinkles= happy!

Amaretto Coffee Creamer No-Bake Cookies

These no-bake cookies are filled with almond flavor including Amaretto Coffee Creamer! Easy and quick, they are a great way to have your cookies on a hot day! {Recipe adapted from Shaken Together .

Ingredients

  • 1/2 cup (1 stick) butter
  • 2 cups sugar
  • 2/3 cup International Delight Amaretto Coffee Creamer
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond extract
  • 1/2 cup sliced almonds
  • 3 cups quick cooking oats
  • 1/4 cup sprinkles, optional

Instructions

  1. Line two cookie sheets with parchment paper.
  2. Melt butter in a medium sized saucepan over medium heat. Add sugar and creamer, stir, and cook until it just begins to bubble. Boil for 1 minute. Add extracts, almonds, and oats and cook for 1 more minute. Remove from heat and stir in sprinkles.
  3. Use two spoons to scoop mounds of the oat mixture onto the cookie sheet. Let sit until they completely cool. Store in an airtight container.

      Oh you must try some sometime! It’s sold in the section by the milk, it’s non-dairy creamer with tons of great flavors!

    Almond extract is totally intoxicating to me, too! And I don’t even ‘love’ almonds. I made a cake last week with almond extract and I wanted just sniff that cake :)

    I love almond extract too! I was an organic chemist, and one of my chemical smelled exactly like almond extract. Although no one else seemed to like it, I really looked forward to the days where I could use it! (That’s probably a LOT stranger than you smelled the bottle in your pantry…)

    You’re so creative! My mind jumps all over the place too when I get new ingredients to play with. (My brain turns into Tigger with caffeine — crazy!) Cant’t wait to read about your Amaretto coffee creamer cheesecake! :)

    These are so cute! I love the sprinkles, the simplicity, and the scrumptiousness! (sorry, I needed another “s”) No bakes are perfect for warm weather. And am I ever with you on new ingredients tormenting my mental capacity. If only we could make a little serving of all our ideas!

    I love using coffee creamer in cookies. I’m a total creamer stalker at the grocery store, looking for new flavors to try. If you love Amaretto, I have an AMAZING Amaretto Dip. It hasn’t gotten posted yet, but I’ll let you know when it does. It’s so good.. I usually end up eating half of it while putting it together. :)

    Mmmmm…these cookies sound yummy! I like the fact that they’re no-bake. Sometimes during the hot summer months, I don’t want to turn on the oven, so this recipe will be perfect!

    The 90’s sound awesome!!!! It has been so cold here and is just starting to worm up, but only to the 50’s or maybe 60’s! Anyway, I am loving these cookies!! No bake is always good!

      I’m okay with 90s…in summer. 90s now just means it’ll be 90 until October and my A/C bill will be more expensive for an extra 2 months! Ugh!

    Everytime i use almond extract, I have to stop and smell the bottle. It’s just such a good smell! This recipe sounds delicious!

    I’m a total coffee snob and only drink my coffee black, so creamer is not something I have around my house nor have I really ever had any desire to buy. But I’ll totally buy some if it flavors no bake cookies!

        It’s basically like Almond paste but you can roll it out (kind of a playdough consistency) the most amazing stuff

    I just read that you haven’t tried marzipan … how about almond paste (like in a bear claw pastry)? Marzipan is basically sweetened almond paste! As a fellow almond lover … your cookies sound amazing!

    Mmmmm….these sound yummy! I don’t drink coffee but I use this in oatmeal. I have kids who went from not eating oatmeal to asking for seconds! I also like it in cocoa.
