I think the Fourth of July is one of my favorite holidays. Maybe because I don’t have to spend weeks beforehand decorating and shopping for it? It’s just one of those holidays you get to enjoy.

Plus, there’s food. Lots and lots of food!

Even though we don’t do 4th of July parties that often (we usually keep it pretty low-key), one of my favorite July 4th memories was a block party a few years ago. I have pictures of Jordan and the other neighbor kids with watermelon rind smiles and throwing water balloons at the adults. I have sparkler pictures and memories of the boy down the street whose parents didn’t join the festivities, but let him (a 10 year old) light off his own fireworks, barefoot, in the cul-de-sac.

Like I said, great memories!

But you know that what I remember most is the food. I made an apple pie, another neighbor made a cake. And, of course, there were adult beverages.

It’s LIGHT. Which means it’s only 95 calories per serving! That way you can drink more with less guilt…or eat more dessert. Or both!

It’s easy to serve: just pour over ice. Add a cute straw and you have a pretty party drink in no time. That leaves more time for you to mingle with your guests, hide from the fireworks (they scare me to death), and make more dessert.

It’s made with Bacardi Rum, and is made with natural strawberry and lime flavors, and pure cane juice – this will keep your guests happy.

Oh, and it tastes great too. Just like a strawberry daiquiri should. I always worry about the alcohol content in the premixed beverages like this – but don’t worry about this one. It packs a decent adult punch, if you know what I mean! {Be sure to drink responsibly!}

Now, of course, I need more ways to enjoy my Bacardi Classic Cocktails Strawberry Daiquiri Light. So I made fudge with it. Isn’t that what everyone does?

Every year around this time I see recipes for Strawberry Daiquiri Pie floating around. There’s no actual alcohol in that pie (where’s the fun in that?) but I’ve always wanted to try it.

But I was in the mood for fudge, and I know you will be too. Your guests next week will LOVE this fudge.

It’s got a crust. As all fudge should.

I love making fudge with crust. I love recreating pie recipes into fudge. It’s kind of a perfect thing for me to do!

This Strawberry Daiquiri Pie Fudge has a graham cracker crust, strawberry ice cream topping for an extra strawberry punch, and a white chocolate fudge infused with the Bacardi Classic Cocktails Strawberry Daiquiri Light.

It comes together very quickly, and is super easy to make. Plus, it’s no bake, which is a must if you live somewhere hot. I’m hating on my oven this time of year!

This tastes just like I imagine the pie would taste – but it packs a little punch from the Bacardi. Just like I like it!

Strawberry Daiquiri Pie Fudge

This strawberry daiquiri pie fudge is just like a strawberry daiquiri pie but in fudge form, and made with Bacardi Classic Cocktails Light!

Ingredients
 

  • 1/2 cup unsalted butter melted (see note)
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 cups graham cracker crumbs
  • 1/2 cup Strawberry Ice Cream Topping
  • 4 cups white chocolate chips
  • 1 can 14 ounces fat-free sweetened condensed milk
  • 2 ounces Bacardi Classic Cocktails Light Strawberry Daiquiri

Instructions

  • Line a 9x9” pan with foil and spray with cooking spray.
  • Mix melted butter, sugar, salt, and graham cracker crumbs in a medium bowl and stir with a fork. Pour into prepared pan and press with your hands to form the crust. Spread with strawberry ice cream topping and chill until fudge is ready.
  • Add white chocolate chips and sweetened condensed milk to a medium saucepan and heat over low heat. Stir continuously until milk and chips are melted together. It will take several minutes. Do not walk away from the stove. The mixture may look semi-curdled or like it’s not going to melt together, but it will. (It will be thicker than your traditional easy fudge because there are more chips in this recipe.)
  • Once the chips and milk are melted together, turn off heat and stir in Bacardi. The mixture will become smooth. Pour over prepared crust and cool for 30 minutes on the counter. Then place in fridge until completely cool, several hours. The fudge will be soft when you cut it. Store in refrigerator.
