These Coconut Key Lime Pie Cookie Cups are the perfect blend of tart and sweet. A coconut infused cake mix cookie is topped with Key Lime Pie Frosting Creations, the newest limited edition flavor by Duncan Hines, for a tart and sweet treat!
Oh my goodness you guys. A travesty happened right when I was in the middle of making these cookies.
My oven broke. *gasp*
If you follow me on Facebook, Twitter, or Instagram, you probably already know this. In fact, you’re probably all, “quit whining already!”
But guys, it’s my OVEN.
I turned it on to preheat, walked away to make the dough, put them in the pans and went to put them in the oven. There was no heat – just lots and lots of gas. I immediately turned it off, of course. Tried again…no dice.
{The repairman just left an hour ago. He took apart the oven and “jiggled” the ignitor and got it working again – for now. He’s ordering a part to replace it, in case “jiggling” doesn’t solve the issue. In the last hour I have baked mini pies, a cake, and magic bars. I’m not going to stop…because I’m scared if I turn it off it won’t turn on again, ha.}
Anyway, back to these cookies. Thank goodness for my wonderful sister-in-law. She let me come over and hijack her oven on Saturday afternoon so I could bake these cookies for all of you. Because, well. They’re important and time-sensitive cookies.
Why?
Have you heard of the new flavors of Frosting Creations that Duncan Hines has released? They have four brand-spanking new flavors available only this month: Pink Lemonade, Key Lime Pie, Peaches and Cream, and Fruit Punch. Cool new flavors in super fun colors for Spring! But they’re only available through March, so get yourself to the store!
I am so excited to have been selected as a one of the bloggers for Duncan Hines’ new Passionate Blogger Program. As part of this program, I get to try out the new flavors of Frosting Creations and share some fun recipes with you! I decided to start with the Key Lime Pie flavor because I am totally crushing on anything citrus right now and even though I’ve never tasted Key Lime anything, my mouth was watering thinking of it!
Believe me, the Key Lime Pie Frosting Creations did not disappoint. It’s the perfect blend of tart and sweet! If you’ve never used Frosting Creations, you must give them a try. I have found that the flavors are really perfect – they actually taste like they are supposed too. You just mix them into your frosting, easy peasy. You can mix them into other things too, like my Mint Chocolate Chip Popcorn Treats. The sky’s the limit with these flavors!
As part of the Passionate Bloggers program, Duncan Hines sent me a Sweet Treat package with everything I would need to create some fun recipes for you. One of the cake mixes they included was French Vanilla, and on the side of the box is a recipe for a Coconut Bundt Cake. I immediately thought of the Key Lime when I looked at that recipe, because Key Lime and Coconut go hand-in-hand.
Also included in the kit was a Wilton Mini Whoopie Pie Pan. I’ve used my regular sized whoppie pie pan to make deep-dish cookies a few times, so I figured, why not use it for mini cookies? A perfect fit. And, if you don’t have this pan, you can totally use a mini muffin tin. They’re almost the same size!
{But wait – you want the pan, right? And the cute push pop containers? AND all the Duncan Hines loot? Well, guess what? Duncan Hines is giving away the same prize pack I got to one of YOU! Keep reading for more info!}

To make these Coconut Key Lime Pie Cookie Cups, I mixed a coconut cream pudding mix into the French Vanilla Cake Mix to turn it into a coconut cookie. I also added some coconut extract (optional if you don’t have it, I got mine at Walmart, FYI) and shredded coconut for extra coconut oomph. The base isn’t overly sweet and pairs wonderfully with the sweet and tart Key Lime Pie frosting. The cookies are topped with some extra coconut and some graham cracker crumbs, to remind you of an actual Key Lime Pie.
These are really, really good. I ate 5. In one sitting. Then I froze the rest to get them out of my sight. Too bad I know where they’re hidden in the freezer…
What some other ideas for some of the other Limited Edition Frosting Creations flavors? Stay tuned. Over the next couple weeks I hope to bring you some more ideas. Now I just have to cross my fingers that the Oven Gods go my way this afternoon!

Adapted from the recipe on the side of the Duncan Hines Cake Mix box.
Ingredients
- 1 box Duncan Hines French Vanilla Cake Mix
- 1-3.4 ounce box coconut cream pudding mix
- 2 eggs
- 1 stick butter, softened
- 1/2 teaspoon coconut extract, optional
- 3/4 cup shredded sweetened coconut
- 1 or 2 cans Frosting Creations Starter Frosting
- 1 or 2 packets Key Lime Pie Frosting Creations
- Toasted Coconut and graham cracker crumbs for garnish, optional
Instructions
- Preheat oven to 350 degrees. Spray a mini whoopie pie tin and/or mini muffin tins with cooking spray. (Makes about 50 cookie cups.)
- Mix cake mix, pudding mix (dry), eggs, and butter on low speed using an electric mixer. Beat until batter comes together, scraping the sides of the bowl as needed. Stir in coconut extract (optional) and coconut.
- Scoop tablespoon sized balls into prepared pans. Press to fit. Bake 7-8 minutes, rotating pans halfway through baking. Cool completely before removing from pans and frosting.
- Stir one packet Key Lime Pie Frosting Creations into one can of frosting. You can simply spread the frosting on the cookies with a knife, and top with toasted coconut and a sprinkle of graham cracker crumbs. Or, use a pastry bag fitted with a 1M tip to pipe the frosting onto the cookies. If you are piping the frosting, you may need a second can of frosting. (I like to add lots of frosting!)

Oh, story of my life Ellen! NEVER enough time!
Oh my gosh, Dorothy. I can’t tell you how many times I’ve gone to grill something and either ran out of propane OR started a gas fire (and destroyed the food) because I forgot to clean the grates one too many time. I realize you’re talking about your oven…but you know, the whole “I am so ready to make this!” and then “Oh crap, I can’t make this!” :*(
I’d eat at least 5 of them. Probably 10. You’re going to make me fat.

I have a regular sized whoopie pie pan and a mini sized donut pan, but not a mini whoopie pie or mini muffin pan. They’re adorable and love the flavors. Fave frosting…pink lemonade or key lime!
Pink Lemonade and Fruit Punch sounds great! I’m looking forward to trying them out!
Your cookie cups are too cute and look yummo!

Ugh, my oven has been on the fritz lately, so I totally feel your pain – the repairman estimated the replacement part as nearly as much as a new oven, so yeah…looks like I’ve got appliance shopping ahead of me.
Hope yours is fixed soon! I have to admit, key lime is one of my fave flavors, especially as we’re headed into spring-time. These look awesome!

Gotta go with key lime, all four of us love key lime!
I can totally relate to your kitchen story….. My oven may be in working condition (knock on wood) but my mixer almost died. And while it’s not quite as important as an oven, big time tears would have been shed!!
These make me think of the lime in the coconut song!! Such a cute idea!!

Key Lime is the one I’d like to try because it looks/tastes so springy. This would be a perfect Easter dessert.
It’s perfect for spring – very tart and citrus-ey!

The Key Lime cookie cups are a great idea! Plus, they’re cute! It’s the worst when something in the kitchen breaks – especially the oven! They should make grills with little side ovens (like the side burners) just for these kinds of emergencies! Fingers crossed the “jiggling” holds until the part arrives! Have a great week!
