When I was a kid, I always ate the same thing for lunch: a cheese sandwich on sourdough bread with butter, not mayo, carrots, a juice box, and a cookie. Can you guess which of the items was my favorite? If you guessed cookie, you’d be right. I always wanted dessert after lunch, and I still do!

You all know how much I love dessert. I mean…I have a baking blog. It’s kind of obvious. No matter how hard I try to skip dessert, I always give in to my cravings, one way or another. And, like long ago in the school lunchroom, I crave dessert even after lunch. So, while I post tons of not-so-healthy desserts I try to limit my intake of those and mix in some lower-sugar and reduced calorie desserts. You know, so I can eat them more often. Like after lunch and dinner!

Something I love to make that is lower in calories and fat is cheesecake. I know, it seems like that wouldn’t be possible, right? But it’s really so easy to make a no-bake cheesecake that’s a little more guilt-free than regular. Low-fat cream cheese and fat-free whipped topping cut the calories in these cheesecakes drastically, even though they have real sugar in them.

And, because I have absolutely no willpower, I need portion control. This is why I love making desserts in jars: a serving is absolutely clear. It’s not like when I eat 6 cookies and then try to convince myself that I only ate one serving. (I’m not alone in doing that, right??)

But really, my absolute favorite part of these Skinni No-Bake Mocha Cheesecakes is the mocha. Because I’m a girl who loves her coffee!

You’ve heard of International Delight, right? They make those yummy coffee creamers. But did you know they also make Iced Coffee? I’d never had International Delight Iced Coffee before, but when I heard they had a Light Iced Coffee version, I was so stoked. There is nothing I like more at 2pm than a caffeine jolt. As the weather warms up I will become addicted to iced coffee again, and the fact that I can drink a light version is awesome. Plus, by drinking this at home I save a ton of money by not going to a coffee house  and buying my afternoon pick-me-up.

Did I mention that a serving of this International Delight Light Iced Coffee has only 100 calories? And that this Mocha flavor totally tastes like chocolate milk? Seriously! I was so torn when trying to decide between the Vanilla and Mocha version at Walmart last week. I finally decided on the Mocha because, well. It’s chocolate!

Besides my love of desserts, I’m sure you know my love of pie. I am addicted to it! If I can give something a crust, I’m going too. As much as I love lower-calorie desserts, I love them more if they have a crust. Especially when the crust reduced fat too, which is another delicious thing about these Mocha Cheesecakes.

These skinny cheesecakes have a reduced-fat Oreo crust, made with coconut oil instead of butter. I’m always hearing so many good things about coconut oil and I’m trying to use it more in my desserts. The coconut oil mixes well with the cookie crumbs, and hardens right up in the refrigerator without any crumbling, since that’s the nature of the oil. The coconut flavor pairs really well with the chocolate and the mocha flavors.

Really, these are probably one of my favorite things I’ve made lately, and the bonus is they’re skinny. Now, I know you may wonder why I made them in jars instead of single serve cups, or why the filling doesn’t go all the way to the top of the jars. Besides my need for portion control, I have another need when it comes to my willpower for desserts…

I need to be able to get rid of them as soon as I make them. I mean, these made 8. But if there are 8 in my fridge, it means I’ll eat 8. I am fond of the question, “Have you ever eaten a whole cake…one slice at a time?”

So yeah…I need to get dessert out of my house. Putting these cheesecakes in jars make them great gifts. Attach a spoon and pass them out at school pick-up. You’ll be the most loved mom there!

Skinny Mini No-Bake Mocha Cheesecakes

Skinny Mini No-Bake Mocha Cheesecakes

Ingredients

  • 8 reduced-fat chocolate sandwich cookies
  • 2 tablespoons coconut oil, softened or melted
  • 8 ounces low-fat cream cheese, softened
  • 1/4 cup sugar
  • 2/3 cup + 1/2 tablespoon International Delight Light Mocha Iced Coffee, divided
  • 1 container whipped topping, divided
  • Chocolate covered espresso beans, for garnish
  • 8 half-pint jars or 4 ounce glasses

Instructions

  1. Crush sandwich cookies in a food processor. Place in a small bowl. Add coconut oil and stir with a fork. If your coconut oil is hard, microwave it for 15-30 seconds so you can scoop it.
  2. Place 2 tablespoons of crust into each jar or glass. Press down to compact. (I use a shot glass for this step.)
  3. Beat cream cheese in a large bowl with a hand mixer until smooth. Mix in International Delight and sugar. Stir in 2 cups of whipped topping. Equally divide among jars or glasses.
  4. Stir 1/2 tablespoon International Delight into the remaining whipped topping. Equally divide among jars and top with a chocolate covered espresso bean. Chill for one hour before serving. Store in refrigerator.

    I just bought the Light Mocha Monday!!!! I was gonna buy regular and just happened to look up and see the Light version!!!! I was so excited!!! It is only 3 WW points plus for a cup! So cool to find a dessert for it now!!!

    These are so cute in the jars! I love cheesecake and mocha, what a perfect combo! I am with you sister in eating 6 cookies and it only counting as one serving! Hello it was in one sitting so one serving, right? I get like this when I eat out of the pan as well, you know slicing a little bit off and continuing to get that perfect line back? Half the pan later I’ve made myself sick! LOL

    Yum! I adore cheesecake, simple recipes and iced coffee, well coffee period as long as it’s sweet!

    Have you tried the vanilla iced coffee yet? I was initially thinking I’d need to find a substitution to make this recipe because I tried the regular version of the vanilla, which is the only flavor I’ve tried thus far, and it was gross to be honest. I found the flavor to be a bit on the artificial side and it left a really gross aftertaste. I was super disappointed because I love sweet drinks and iced coffee so much. But, since you’re giving the mocha a good review I’ll have to give it a try.

      I haven’t tried the vanilla. My friend Aimee over at Shugarysweets.com tried it and really liked it. This one, I swear, it tasted like chocolate milk! It didn’t taste light at all, but it is!

        I was really surprised I was so turned off by the vanilla. I think it was the aftertaste more than anything, although I wasn’t that impressed with the overall flavor. I will definitely try the mocha, which I wanted anyway but they were out of when I bought.

    I love everything about this dessert, especially the “skinny” part because Lord knows, I consume enough calories as is. When I was in high school, I’d actually take those little packets of International Delight flavoured coffee creamers and chug them like shooter glasses. Pretty gross now that I think about it but they were deeeelicious!

    Thanks for this recipe. Can’t wait to try it. I like it even more since it has the iced coffee in it. Did you see wal mart has the 4 bottle glass jugs as well. Haven’t had the mocha… I’m too addicted to the vanilla.

    I have the same willpower issues…I just can’t stop at one. But treats in jars definitely help. There is clearly a serving set up. I still need to try this iced coffee, I know that I will love it. Funny thing is that I applied for this shop too and said I was going to make this exact thing. Great minds think alike. I better start thinking of a new treat for it :-)

    I’m dying because my 60’s kitchen is being updated and I can’t make these NOW!!! I don’t know how you come up with all these Delish ideas but keep ‘em coming. My friends and family love you for it! BTW in the Midwest they sell ID Light at Targets and all Dillons.
