Peanut Butter Sandwich Cookies
My favorite peanut butter cookie recipe is made into sandwich cookies and filled with peanut butter frosting!

Cookies:
- ½ cup (113g) unsalted butter softened
- ¾ cup (200g) peanut butter (shelf stable; not natural)
- ¾ cup (150g) packed brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 tablespoon milk
- ¼ teaspoon salt
- ½ teaspoon baking soda
- 1 ¾ cups (217g) all purpose flour
Filling:
- ½ tablespoons unsalted butter softened
- ½ cup (134g) peanut butter
- 2 cups (226g) powdered sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 2-3 tablespoons heavy whipping cream or milk
Preheat oven to 350°F. Line 2 cookie sheets with parchment or silpat baking mats.
Cream butter, peanut butter, and both sugars in the bowl of an electric mixer fitted with the paddle attachment or with a hand mixer. Add egg, vanilla, milk, and salt and baking soda. Mix until combined. Slowly add flour and mix until dough comes together.
Scoop 1 tablespoon sized balls of dough. Place on cookie sheet 2-inches apart. Press each cookie down with the tines of a fork to flatten and create the criss cross pattern.
Bake for 9-14 minutes, until they just begin to brown. Cool completely on cookie sheets.
Make the filling: beat butter and peanut butter until smooth using a hand mixer. Slowly mix in powdered sugar, mix until crumbly. Add extract. Start by adding 2 tablespoons of heavy whipping cream or milk, then add more 1 teaspoon at a time until you have the desired thickness for filling.
Turn half the cookies upside dow and spread with filling. Sandwich with the remaining cookies.
Store in an airtight container for up to 3 days.
