Cookie Butter Pretzel Granola Bites

Ingredients

  • 1/3 cup honey
  • 1/3 cup Cookie Butter (or Biscoff)
  • 3 tablespoons butter
  • 1 cup pretzels , crushed
  • 1 1/2 cups rolled oats
  • 2 ounces white chocolate
  • 1 cup powdered sugar , optional

Instructions

  • Place honey, cookie butter, butter, and white chocolate in a large microwave safe bowl. Heat on HIGH for about 1 minute, stirring every 15 seconds, until melted and smooth. Stir in crushed pretzels and oats.
  • Roll into bite-sized balls and place on wax paper. Place powdered sugar in a small bowl. If desired, roll balls in the powdered sugar to coat. Chill in refrigerator until set, about 15 minutes. (You may need a second dip in the powdered sugar if too much melts into the balls during cooling.)
