Ingredients

  • 1 (12 ounce) bag white chocolate chips
  • 1 (16 ounce) can lemon frosting (i.e. Betty Crocker)

Instructions

  • Line an 8x8-inch pan with foil or parchment paper and spray with nonstick cooking spray.
  • Add white chocolate chips and frosting to a large microwave safe bowl. Heat on 50% power 1 minute; stir. Continue heating at 100% power in 30 second increments, stirring between each. If you notice the white chocolate having trouble melting, press the chips with your spatula as you stir to flatten them and keep heating. It might take a bit!
  • Once the mixture is combined, pour into prepared pan. Chill until set, at least 1 hour.
  • Slice into squares and store in an airtight container in the fridge.

Notes

White chocolate chips can be finicky and hard to melt. Be sure to use fresher chocolate chips for best results. While stirring use your spoon/spatula to smoosh the chips as they melt and they will dissolve into the mixture easily. Be sure to stir well after each 30 seconds in the microwave, scraping the bottom of the bowl, so it doesn’t scorch.
