PB&J Gooey Bars

Ingredients

  • 1 yellow cake mix
  • 2 eggs
  • 1/2 cup peanut butter
  • 1/2 cup sweetened condensed milk from a 14 ounce can
  • 1/2 cup jam or jelly I used seedless strawberry jam
  • 3/4 cup white chocolate chips or peanut butter chips

Instructions

  • Preheat oven to 350 degrees. Line a 9x9” pan with foil and spray liberally with cooking spray.
  • With a hand mixer or electric mixer, beat eggs, cake mix, and peanut butter until mixture is crumbly. Press about 2/3 of the mixture into prepared pan.
  • Sprinkle white chocolate or peanut butter chips over the crust. Whisk together the sweetened condensed milk and jam in a measuring cup or small bowl. Pour over the chips and crust.
  • Sprinkle the rest of the cake batter mixture evenly over the top of the bars. Press lightly to compact. Bake for 25-28 minutes, until top just starts to get golden brown. Cool completely before slicing into bars.
