Ingredients

  • 1 ½ cups (170g) graham cracker crumbs
  • ¼ cup (50g) granulated sugar
  • 7 tablespoons unsalted butter melted
  • 1 3.4 ounce box instant vanilla pudding mix
  • 12-16 ounces Cool Whip
  • 2 cups blueberry pie filling

Instructions

  • Stir together graham cracker crumbs and sugar in a medium bowl. Add melted butter and stir with a fork sandy. Press into the bottom of a 9-inch square pan.
  • Place 8 ounces (1 small container) Cool Whip in a medium bowl. Add pudding mix and stir until pudding is dissolved. Spread over crust.
  • Pour pie filling over filling. Top with additional cool whip (about ½ to one full 8-ounce container). Sprinkle top with additional graham cracker crumbs.
  • Chill at least 1 hour before serving.

Notes

  • For a light filling, don’t overmix the Cool Whip and pudding mix. This will keep the whipped topping nice and fluffy.
  • You can make this blueberry dream dessert up to a day in advance, and leftovers will keep for three days in the refrigerator.
  • I like to sprinkle fresh blueberries over the top before serving it, but this is optional. If you want to do this, wait until serving it; otherwise, the blueberries can stain the whipped topping.
