Ingredients
FOR THE SALAD:

mixed greens

red onion

FOR THE DRESSING:

white balsamic vinegar

Instructions
Toss all ingredients in a large salad bowl.
The amount of chicken you use depends on how many you're feeding. As a main dish, this salad feeds 2 and 8 ounces of chicken breast is plenty.
Make the dressing:
Place all dressing ingredients in a jar. Seal and shake.
Pour over salad, toss to coat. Serve immediately.
