Rolo Stuffed Oatmeal Cookies

Ingredients

  • 1 cup butter — softened
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 3 cups oats — quick-cooking
  • About 40 mini or regular size Rolos — depending on how big you want your cookies

Instructions

  1. Preheat oven to 350°. Line your baking sheets with parchment paper or silpat liners.
  2. Mix flour, baking soda, cinnamon, and salt in a medium bowl. Set aside.
  3. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugars until creamy. Add the eggs and vanilla and beat well. Add the dry ingredients and mix until combined. Stir in the oats.
  4. Scoop 2 tablespoons of dough onto a cookie sheet. place a Rolo in the center of each scoop and press the dough around the candy to seal. Roll between your palms. Place about 2” apart on the cookie sheet.
  5. Bake 10-12 minutes. Cool five minutes and then remove from pan to cool completely.
