Oatmeal Cookie Magic Bars Recipe

A version of 7 layer bars with an oatmeal cookie crust!

Ingredients

  • ½ cup (113g) unsalted butter , softened
  • ½ cup (100g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup (124g) all-purpose flour
  • 1 ½ cups Quick Oats
  • 2 cups some sort of chocolate chips (see note)
  • 2 cups additional toppings (see note)
  • 1 14 ounce can sweetened condensed milk

Instructions

  • Preheat oven to 350°F. Line a 9x13” pan with foil or parchment and spray well with cooking spray. These are very sticky and the foil helps remove them easily from the pan, but it’s not mandatory.
  • Cream butter and sugars in the bowl of an electric mixer fitted with a paddle attachment. Beat in egg and vanilla. Mix in baking soda and cinnamon. Slowly beat in flour. Mix in oats.
  • Press dough into pan. Dough will be sticky so it helps to spray your hands with cooking spray. It will be a thin layer on the bottom of the pan. Bake for 10 minutes.
  • Remove hot pan from oven and sprinkle evenly with toppings. Pour sweetened condensed milk evenly over the top (try to avoid having it touch the sides of the pan). Return to oven and bake for 25-30 more minutes until the edges are browning and the top seems semi-set. These stay sticky, and sometimes the chips (especially butterscotch) melt around the edges.
  • Cool completely before cutting. They'll be very gooey - easier to cut once fully cool. Store in an airtight container for up to 4 days or freeze in a single layer for up to 3 months.

Notes

Toppings: This is a seven layer bar - but you can use as many layers as you want - just be sure to use 4 cups of toppings and make sure at least 2 cups are some sort of chocolate chips.
