Avocado Popsicles Recipe

Avocado and lime make a great tasting frozen treat!

Ingredients

  • 1 cup (237ml) water
  • ½ cup (100g) granulated sugar
  • 1 medium avocado
  • ¼ cup (59ml) lime juice
  • 1 teaspoon vanilla extract

Instructions

  • Heat sugar and water in a medium saucepan over low heat until sugar is completely melted. Cool completely.
  • Place avocado, lime juice, vanilla, and cooled simple syrup in a blender. Blend until smooth.
  • Pour mixture into popsicle molds. Top with sticks and freeze until firm, at least 4 hours.
  • Serve immediately or remove from molds and wrap individually, then re-freeze.

Notes

  • Store in freezer for up to 1 month.
  • To help remove popsicles from molds, run the molds under room temperature water for a few seconds or until they are able to pull out.
  • Serving tip: want to make this a fun boozy treat? Serve in a glass of tequila!
