Oh hey! How ya’ doing? It’s me again!

I know, another post. On a Monday morning! I’m just here to give you hunger pains with your coffee.

This is a realllllllly important post. It’s a contest! And, because you love me…and if you want…I’d love for you to vote for me!

I was asked by Solo Foods to be a part of their Sweetest 16 Baking Recipe Contest. How could I say no? Solo Foods sent me a box of goodies, Iron Chef style, and my job was to take at least one ingredient and make a recipe with it. Then I get to go head to head with other fab bloggers in a March Madness style sweet 16 contest. Voting in Round 1 begins today!

When I opened the box, there was a can of almond paste sitting there, on the top, glowing. Really. It was glowing. Speaking to me.

It told me to make bars. Almond Magic Bars.

And, well. When canned food tells me to do something in a magical, glowing voice…you should listen to it.

These bars have a shortbread crust that has been infused with almond paste. Then the crust is topped with white chocolate chips and sliced almonds.

And then you know what I did? I mixed the rest of the almond paste with sweetened condensed milk. I mean…is there anything better?

Really, you need these bars.

Guess what? MY HUSBAND LIKED THEM. He WENT BACK FOR SECONDS. He never does that. Ever. And he did that with these…so you have to know they are good.

Almond White Chocolate Magic Bars

Ingredients
 

  • 1 can Solo Almond Paste (8 ounce can)
  • 1/2 cup butter , softened
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 1/2 cups white chocolate chips
  • 1 1/2 cups sliced almonds
  • 1 can Sweetened Condensed Milk (14 ounce can)

Instructions

  • Preheat oven to 350 degrees. Line a 9x13” baking pan with foil and spray with cooking spray.
  • Place almond paste in a food processor and pulse until the mixture becomes a fine crumb, just a few seconds.
  • Place butter and 1 cup of the almond paste crumbs in the bowl of an electric mixer fitted with a paddle attachment. Add sugar and beat on medium speed until fluffy. Add flour slowly and mix until mixture becomes together (it will be crumbly). Press in an even layer into the prepared pan. Bake for 15 minutes.
  • Place the sweetened condensed milk and remaining almond paste in a medium bowl. Microwave for 30 seconds and stir to combine.
  • When the crust comes out of the oven, sprinkle the white chocolate chips and sliced almonds over the top. Pour the sweetened condensed milk mixture over the top and spread evenly as gently as possible so as not to mix up the toppings.
  • Bake for 20 minutes, or until the edges begin to brown. Cool completely before cutting into bars.

  1. Oh boy, white chocolate and almonds! I think that Craisins would be nice for a Christmas version. By the way, Solo almond paste is the only brand that is gluten free. It is also the only brand I use. I think I have some cookies bars to bake…..

  5. I always find myself shying away from things that use almond paste cause it’s not cheap! But these look totally worth it.

  6. My hubby would knock people out of the way to get to these bars. Now I’m going to have to add almond paste to the grocery list. It’s all good, he’s worth it, and I do have a long honey do list for him! I voted, be sure to let us know when the next round is!
