These Pumpkin Spice Oatmeal Cookie Cups are the perfect way to use those Pumpkin Spice Hershey’s Kisses and get your oatmeal cookie fix!

Getting older is kinda sucky at times, don’t you think? I mean, I’m happy to be the age I am (I’m even looking forward to 40), but there are things that come with age that are just not fair. Things like worsening eyesight, creaky knees, waking up with aches and pains, slower metabolism, wetting oneself at random times, etc.

While some of these things *may* have happened to me in the past, the one thing I hate  about aging is motion sickness. You know how they say “kids grow out of that”? Well guess what? They don’t always grow out of it.

Carousels are a given, I haven’t been able to handle those for years. Driving in the backseat – that’s a no-no for me. But hey, so is driving. I never knew you could feel motion sick while actually operating a vehicle.

Swinging on the swings? Nope!

Dancing that involves spinning? Uh-uh.

And the newest addition to my list? Looking from side to side while working out. Yes, folks, while I was using a machine to do some sort of row exercise, the trainer had me look left when I pulled left, look right when I pulled right, etc. And I almost threw up on him.

He let me look straight for the rest of the sets. #smartman

Pesky metabolism aside, one thing I do like about time passing is that all the Hershey’s Kisses holiday flavors are coming out. Like these Pumpkin Spice Kisses. They really do taste like pumpkin spice mixed with white chocolate. #sogood #toogood

And they are the perfect complement for Oatmeal Cookies…so I thought I’d make some Pumpkin Spice Oatmeal Cookie Cups!

I really, really love oatmeal cookies. I think they’re actually my favorite cookie, so it’s so strange I don’t have very many of them on my site.

So I’m going to start remedying the whole absent oatmeal cookie thing, starting today!

Oatmeal pairs so good with pumpkin spice and white chocolate, so I knew these cookies would be the total bomb. The oatmeal cookie is soft and full of brown sugar and cinnamon goodness. I baked them in mini muffin tins (just pressed about 1-1/2 tablespoons of dough in each slot) and then pressed the Hershey’s Kisses in as soon as they come out of the oven.

Be careful after you’ve added the Kisses – if you move the pan too much you run the risk of them collapsing. They melt, but hold they’re shape, after you press them in, and until they harden they’re fragile. So press them in each cookie, then walk away.

You know what other Kisses would be amazing with this? Caramel. Or the Coconut ones in Spring. {A plea to Hershey’s: PLEASE make the coconut kisses available year round! Thanks much!}

These cookie cups are a little dangerous. As in, you can pop down four without even blinking an eye.

And it won’t make you dizzy, I promise. Unless you’re eating them while swinging. Or operating a vehicle.

Pumpkin Spice Oatmeal Cookie Cups

Easy Oatmeal Cookies with pumpkin candy on top!

Yield 24 cookies

Ingredients
 

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 cups Quick Oats
  • 24 Pumpkin Spice Hershey’s Kisses unwrapped (have a few extra, just in case) or use ANY flavor Kisses!

Instructions

  • Preheat oven to 350F. Spray two mini muffin mans (24 total cavities) with cooking spray. I like using the kind with flour, to ensure they do not stick.
  • Cream butter and sugars in the bowl of an electric mixer fitted with a paddle attachment. Beat in egg and vanilla. Mix in baking soda and cinnamon. Slowly beat in flour. Mix in oats.
  • Scoop balls of dough into prepared pans. I used about 1 to 1-1/2 tablespoons of dough per muffin cavity. Press gently into pan.
  • Bake for about 10-11 minutes, until the tops are golden. As soon as you remove the pans from the oven, press one Kiss into each cookie. Let cool completely before moving the pans. If you move the pans too much while the Kisses are melty, they will collapse. Once the Kisses have re-hardened, remove cookies from pan.

  1. I’m going to have to keep my eyes open for these Kisses in my store. I don’t live near Target, and I hardly ever go out there. I always miss out on the Target only treats. I’m hoping they’ll have these at my neighborhood Safeway. Oatmeal does seem like the perfect pairing. Can’t wait to try them.

    I was just hospitalized for vertigo just as you have. My inner ear “stones” were displaced.
    There is a maneuver on Youtube, you might try. No guarantees you wont throw up. But it will only be once.
    I also take Dramamine to be able to tolerate flying and driving in heavy traffic. Best of luck with it!

  6. I was at Target yesterday and had my hands on the bag of those Kisses but put them back b/c really….they are just WAY too good! 🙂 Your cookies are adorable. And in a muffin tin, clutch move. They don’t spread that way and no need to chill dough.

    And when I was pregnant I was sick the WHOLE time. Like 38 weeks of motion sickness. It’s no joke and I hope yours doesn’t get worse!

    1. Mine was so bad too, but at least it died off after 13 weeks. I couldn’t even get off the couch!
