If you love the Taco Bell Mexican Pizza, but don’t always feel like leaving the house to go get it–this recipe is great for you. This is a homemade Mexican pizza recipe that will remind you so much of the original – and it’s easy to make (and healthier too!)

Easy Copycat Mexican Pizza Recipe

Mexican Pizza has become a favorite of many. It is typically layered with tortillas, cheese, beans, taco meat, and many other toppings you would usually find on tacos. Many people have recreated this pizza, but this specific recipe has baked tortillas instead of fried and is better for you!

Ingredients Needed

  • Flour Tortillas: These are the crust. You’ll need fajita size (6-inch round).
  • Refried beans: The best style of beans for this recipe – use your favorite kind of beans for this.
  • Taco Meat: You can use ground turkey or beef and your favorite taco seasoning. I start with the meat already cooked, making this the perfect leftover meal.
  • Red Enchilada Sauce: This is the sauce we use in place of pizza sauce.
  • Shredded Cheddar Cheese: You can also mix different cheeses if you would like!
  • Roma Tomato

How to make copycat mexican pizza

  • Preheat oven to 400°F. Spray a cookie sheet with nonstick cooking spray.
  • Place tortillas on prepared cookie sheet(s). Spray each tortilla evenly with nonstick cooking spray. 
  • Bake 3-5 minutes, then flip and bake another 3-5 minutes, watching closely, until they’re browned on each side.
  • Remove tortillas from cookie sheet. Place 4 tortillas on the cookie sheet. Spread each with refried beans. Top with taco meat.
  • Place another tortilla on top the meat and spread with enchilada sauce. Sprinkle with cheese and tomatoes.
  • Bake until cheese is melted and meat is heated through, about 5-8 minutes. Serve hot.
  • Store leftovers in the refrigerator for up to 2 days. Bake to reheat or use the air fryer!

Expert Tips

  • For your taco meat, we love using reduced sodium taco seasoning and following the directions on the packet. But you can use whatever you want!
  • To reheat them, put them in the oven or air fryer for a few minutes!
  • Make sure to spay each tortilla you use with nonstick cooking spray.

  • Taco meat: you can make your favorite taco meat using ground beef or ground turkey. We love using a packet of reduced sodium taco seasoning and following the directions on the packet, but use your favorite. This is a great way to use up leftover meat.
