Make Snickers Brownies at Home

I should really call these Outrageous Snickers Brownies because that’s what they are! Totally over-the-top brownies with a snickers twist. They are amazing.

If you’ve ever been to Disney California Adventure, they might sound familiar! They’re my copycat Choco-Smash Candy Bar and, wow, they are just as great as the inspiration.

  • Finally, they’re topped with chocolate that hardens, so you get that candy bar effect.

Disney Choco-Smash CANDY Bar Copycat

These snickers brownie bars are my copycat recipe for Disney Choco-Smash Candy Bars. If you’ve ever visited Pym’s Kitchen at Avenger’s Campus in Disney California Adventure, maybe you’ve tried one of these giant snickers brownie candy bars. Pym’s Kitchen is an Ant Man-themed restaurant, so everything is tiny or big. Choco-Smash Candy bars are big!

I keep things easier and add a chocolate coating on top instead of dipping each bar in chocolate for my version. Other than that, they’re pretty similar.

If you know me, you know I love a great copycat recipe, and this snickers brownies recipe is one of my favorites. Every layer of these decadent bars is so good. It’s a show-stopping treat!

Ingredients

  • Brownies: You can use a box mix, homemade brownie mix, or ANY brownie recipe. If you’re making my brownies, you’ll need oil, cocoa powder, flour, sugar, eggs, vanilla and salt.
  • Nougat: Marshmallow fluff (also called marshmallow cream or creme) and chocolate chips
  • Caramel: Unwrapped caramels (I recommend KRAFT brand) and milk
  • Peanut Layer: Creamy peanut butter and chopped peanuts
  • Chocolate Topping: Chocolate chips and vegetable oil

How to Make Snickers Brownies

  1. Preheat oven to 350°F and line a 9×13” baking pan with foil. Coat the foil with nonstick cooking spray. If you don’t have foil, you can use parchment paper. Either one will make it easy to remove the bars from the pan for slicing.
  2. Brownies: Mix the oil, sugar, cocoa, and eggs in a bowl until smooth. Add the vanilla, water, salt, and flour and stir until smooth. Pour the batter into the prepared pan and bake for 15to 20 minutes. Cool the brownies in the pan before you add the nougat layer.
  3. Nougat Layer: Melt chocolate chips in the microwave and stir until smooth. Add the marshmallow fluff and milk, and then stir. The mixture will be thick. Spread the chocolate mixture over the cooled brownies. Place the pan in the refrigerator while you prepare the caramel.
  4. Caramel Layer: Melt the caramels with milk in the microwave and stir until smooth. Spread the nougat over the chocolate layer in the pan. Chill the bars again until the nougat is set.
  5. Peanut Layer: Sprinkle the chopped peanuts over the caramel layer. Warm the peanut butter in the microwave until it’s smooth and spreadable. Spread it over the peanut, and then chill the bars again.
  6. Topping: Melt the rest of the chocolate chips with vegetable oil in a microwave-safe bowl.  Heat for 1 minute, then stir and heat in additional 30-second increments until the mixture is melted and smooth. Spread the chocolate evenly over the peanut butter layer. Chill the bars until the top layer is set.
  7. First, lift them in one piece out of the pan to slice the bars. Use a sharp knife to slice straight through the bars and cut them into bars. Don’t use a sawing motion; otherwise, the chocolate will break and splinter on top.

Copycat Candy Bar Expert Tips

  • Don’t skip lining the pan. You can use foil or parchment paper, making it easy to lift the whole slab of bars in one piece.
  • Don’t skip the chilling steps. Chill each layer before adding the next one for everything to set correctly. Also, allow the brownies to cool completely before adding the first layer.
  • Not all caramels melt the same. I’ve tested this recipe with Kraft squares and bits and Werther’s Chewy Caramels. I don’t recommend using Werther’s Soft Caramels for this recipe. Please see the recipe notes for melting tips.
  • Don’t use natural peanut butter. No-stir regular creamy peanut butter works best.
  • For best results, store the bars in the refrigerator. They will hold up well at room temperature for an hour or so, but once it gets to be two hours, the caramel will start to ooze.
  • Slice down through the bars in one motion to keep the top layer nice. Avoid sawing the bars because the hardened chocolate on top will splinter.
  • These snickers brownies are freezer-friendly! Store them in a freezer bag for up to two months.

FAQ

Can I use box brownie mix?

Yes, feel free to use brownie mix instead of making them from scratch.

Why does my caramel ooze?

Not all caramels melt the same and will set differently. I recommend using Kraft squares, Kraft Bits, or Werther’s Chewy Caramels for this recipe.

Also, the caramel will ooze if the bars sit out at room temperature for too long. It’s best to keep them in the refrigerator.

Can I make this without the peanuts or peanut butter?

Yes, you can use almond butter and chopped almonds instead of peanuts.

Look for Choco-Smash Candy Bars at the Avenger’s Campus at Disney California Adventure. They’re at Pym’s Kitchen.

Can you freeze snickers brownies?

Yes, they freeze great for up to two months.

Ingredients
 

Brownies:

  • ½ cup (118ml) vegetable oil
  • 1 cup (200g) granulated sugar
  • cup (54g) unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon 15ml water
  • ¼ teaspoon salt
  • ½ cup (62g) all-purpose flour

Topping:

  • 7 ounces marshmallow fluff
  • 3 cups chocolate chips divided
  • 10 ounces caramels unwrapped (see note)
  • 3 (45ml) tablespoons milk, divided (see note)
  • ¾ cup 200g creamy peanut butter
  • ½ cup chopped peanuts
  • 1 tablespoon vegetable oil

Instructions

  • Make the Brownies: Stir together oil, sugar, cocoa, and eggs until smooth. Add vanilla, water, salt, and flour and stir until smooth. Pour into prepared pan. Bake 15-20 minutes, or until baked through. Cool completely before finishing bars.
  • Nougat Layer: Place 1 ½ cups chocolate chips in a microwave safe bowl. Heat for 1 minute, then stir and heat in additional 30 second increments until melted and smooth. Add Marshmallow Fluff and 1 tablespoon (15ml) milk and stir – mixture will be thick. Spread evenly in a thin layer over cooled brownies. Chill while preparing caramel.
  • Caramel Layer: Add caramels to a microwave safe bowl along with 2-3 tablespoons (30-45 ml) milk (see note). Heat for 1 minute, then stir and continue heating and stirring in 30 second increments until melted and smooth. Spread evenly over nougat. Chill to set caramel.
  • Peanut Layer: Sprinkle chopped peanuts over caramel. Place peanut butter in a microwave safe bowl. Heat for 30-45 seconds, until it’s smooth and spreadable. Spread over peanuts. Chill while preparing topping.
  • Topping: Place remaining 1 ½ cups chocolate chips and vegetable oil in a microwave safe bowl. Heat for 1 minute, then stir and heat in additional 30 second increments until melted and smooth. Spread evenly over peanut butter and chill to set.
  • Cut into bars or squares and serve
  • Store in refrigerator. Bars can be frozen for up to 2 months.

Recipe Notes

  • Caramels: Not all caramels melt the same. If using Kraft squares or bits, use 3 tablespoons milk. If using Werthers Chewy Caramels, use 2 tablespoons. Werthers Soft Caramels are not recommended. Regardless, I recommend storing these bars in the refrigerator – after a few hours at room temperature the caramel will ooze.
  • Be sure to line your pan so you can easily remove the whole slab of bars to cut them.
  • When cutting, make each cut in one slice (instead of see-sawing the knife) to avoid splintering the top.
  • Only use a no-stir peanut butter, not natural.
  • Feel free to substitute a box brownie mix.
